CHOCOLATE CRUNCH BROWNIES
A close girlfriend's mom used to own a coffee shop and sold these brownies. They were so delicious! I asked her for the recipe and every time I serve them I get rave reviews. Everyone knows you can't go wrong with peanut butter and chocolate!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Beat sugar and butter with an electric mixer until fluffy. Beat in eggs and vanilla.
- Mix flour, cocoa powder, and baking powder together in a small bowl. Add to the egg mixture, beating until smooth. Spread batter into the prepared pan.
- Bake in the preheated oven until set, about 15 minutes. Remove from the oven and top with marshmallows. Continue baking for 3 minutes. Allow to cool.
- Meanwhile, melt butter peanut butter and chocolate chips in a small saucepan over low heat. Stir until smooth. Fold in rice cereal. Spread over the marshmallow later. Refrigerate until firm enough to slice, 1 to 2 hours.

- Gently melt the butter, chocolate and syrup in a pan over a low heat, stirring frequently until smooth, then cool for about 10 mins.
- Stir the biscuits and sweets into the pan until well mixed, then pour into a 17cm square tin lined with foil and spread the mixture to roughly level it. Chill until hard, then cut into fingers.

- Put the chocolate in a heatproof bowl, place over a pan of simmering water and stir frequently until the chocolate has melted.
- Fold in the rice bubbles, coconut and fried fruit and mix well.
- Tip onto a tray covered with a sheet of non stick baking paper and spread with a knife or spatula to a thin even layer. Neaten edges then refrigerate till set. Cut into squares.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square tin and line with baking parchment. Stir the melted butter and vanilla together in a bowl. Mix the caster sugar, flour and cocoa together in another bowl.
- Pour the bowl of wet ingredients into the dry and beat together, then add the egg and beat again until combined. Press into the prepared tin. Brush the top with water and sprinkle over the granulated sugar.
- Bake for 30-35 mins. Leave to cool slightly in the tin for 5 mins before slicing into squares and transferring to a wire rack to cool completely.

I found this recipe in the Kraft Food & Family Magazine, Summer 2005 issue. It looks like something the kids could make with a little help from mom or dad.

Steps:
- Spray bottom and sides of 8-inch square pan with cooking spray.
- Place butter and marshmallows in large microwavable bowl; microwave on high 45 seconds.
- Stir with rubber scraper; microwave additional 30 seconds or until marshmallows are melted.
- Measure 1/2 cup peanut butter. Remove 2 tablespoons peanut butter and set aside.
- Stir remaining peanut butter into marshmallow mixture.
- Immediately add cereal; stir until well-coated.
- With wet hands, press cereal into pan.
- Place chocolate squares in small microwavable bowl with remaining peanut butter.
- Microwave on high 30 to 45 seconds, or until chocolate is completely melted and mixture is smooth when stirred.
- Pour chocolate mixture over cereal treats, spread with rubber scraper to cover.
- Refrogerate 15 minutes until frosting is set. Cut into 16 squares.

- Preheat oven to 350°F (175°C).
- Place crackers on a greased, parchment paper-lined baking sheet so that the entire surface is covered.
- In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling, then boil for 3 minutes.
- Pour the caramel over the crackers, spreading evenly with a spatula.
- Bake for 5 minutes.
- Pour the chocolate chips over the crackers and cover with tin foil for 3 minutes.
- Remove the foil and spread the softened chocolate over the top evenly.
- Sprinkle with pecans, cover with foil, and freeze for 1 hour.
- Break the bark up into pieces.
