Steps:
- Heat oven to 400°F Grease bottoms only of 12 regular-size muffin cups with spray, or line with paper baking cups. In small bowl, mix all filling ingredients until smooth; set aside.
- In large bowl, beat milk, oil and egg with fork or wire whisk. Stir in remaining muffin ingredients just until flour is moistened. Divide batter evenly among muffin cups.
- Place about 1 rounded teaspoon filling on batter in each muffin cup. Top with remaining batter.
- Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack (may need to run knife around side of muffins to loosen). Cool 5 minutes. Serve warm or cool.
CHOCOLATE SURPRISE MUFFINS
Ssshhhhh! The surprises are: 1) the raspberry in the center, and 2) these muffins are good for you, with bran and wheat germ, and no added fats! Don't tell, and they will never know.

- Preheat oven to 375 degrees F and grease muffin tins.
- In a large bowl, mix the yogurt with the milk. Mix in the beaten egg, honey and vanilla.
- Add the bran and wheat germ, mix and let stand for several minutes to absorb the liquids.
- Into another bowl, sift the flour, baking soda, salt and cocoa powder. Stir together well.
- Add to the wet mixture and stir only until combined.
- Drop mixture into muffin tins until 1/3 full.
- Add 1 heaping teaspoon raspberry preserves to the middle of each muffin tin.
- Top with remaining muffin batter until each tin is 3/4 full.
- Place the muffin tins on a baking sheet and bake 15-20 minutes, until muffins have a firm feel and slightly springs back when lightly touched.
- Let cool 5 minutes in the tins, then turn out and let cool completely on a wire rack.

Steps:
- Mix together margarine and flour until crumbly.
- Add rest of ingredients and stir together well.
- Grease muffin tins and lightly dust them with flour.
- Spoon batter into tins about half full.
- Bake@ 350° (175°C) for 20-25 minutes.
- Check if ready by pushing finger down on muffin and if it rises back up it is ready.
- Frost with chocolate icing.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

- Preheat oven to 375 degrees. Line 12 standard muffin cups with paper liners; lightly coat liners with cooking spray.
- Whisk together baking mix and sugar. In a large bowl, whisk together applesauce, buttermilk, eggs, oil, and vanilla. Fold in dry mixture until just combined, then gently fold in chocolate and cherries.
- Divide batter evenly among cups, filling each to the brim. Bake until a toothpick inserted in center of a muffin comes out clean, 25 to 30 minutes. Let cool in pan 5 minutes, then remove from pan and let cool completely on a wire rack.

- Preheat oven to 400°F.
- Grease twelve muffin cups.
- In a large bowl, stir together flour, sugars, baking powder, and salt.
- In another bowl, stir together milk, eggs, butter, and vanilla until blended.
- Make a well in center of dry ingredients.
- Add milk mixture and stir just to combine.
- Stir in chocolate chips and nuts.
- Spoon batter into prepared muffin cups.
- Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
- Remove muffin tin to wire rack.

Steps:
- Grease the bottom ONLY of a 12-cup muffin tin.
- Preheat the oven to 400 degrees F.
- In a medium mixing bowl, stir together the flour, sugar, baking powder and salt.
- In a second medium sized bowl, combine the egg, milk, vanilla and vegetable oil.
- Make a "well" in the dry ingredients and add the wet ingredients to the well.
- Stir until the mixture is moist.
- Don't overmix - the batter should be lumpy.
- Fill the muffin tins half full.
- Now, here is the surprise - drop a teaspoon of jelly into the center of each muffin.
- Add more batter on top of the jelly so that each cup is 2/3 full.
- Bake for 20-25 minutes, or until golden brown.
- When the muffins are baked there will be a jelly surprise in the middle.

- In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, milk and butter. Stir into dry ingredients just until moistened.

- Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
- In a large bowl, mix together flour, 2 cups sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.

- Remember to preheat oven to 175 degrees Celcius before starting.
- In a large/medium bowl mix in the dry ingredients (flour, baking powder, cocoa powder, and salt).
- Melt the butter/margarine with the 2 ounces of chocolate in the microwave in another bowl.
- Should take around 30-40 seconds depending on the type of microwave.
- (Check after 30 seconds and add on the time if not melted).
- When melted, take out the bowl and slowly (becareful to not spill the liquid) blend together the chocolate and butter/margarine until well mixed.
- Make sure no chocolate is left stuck at the bottom of the bowl.
- Set aside and let it cool for 1 minute.
- When cooled, combine the chocolate yogurt into the same bowl and carefully mix them together until the liquid is quick thick.
- If the bowl is not large enough, transfer this mixture to a slight bigger one.
- Afterwards, add in the sugar and mix well.
- Pour this wet mixture into the flour mixture and slowly blend the two together.
- Do not over mix.
- The result should be quick sticky and thick.
- Leave it aside.
- Now in separate bowl, beat the egg whites until it forms soft peaks.
- Fold the egg whites into the flour's thick mixture until well blended.
- But again, don't overmix to let the air escape from the mixture.
- Spoon batter equally into the muffin tins (12).
- Bake for around 20 minutes.
- Check the readiness by poking a toothpick into a muffin nearest you.
- If the center comes out clean then it's done.
- If not, bake for another 5-10 minutes.
CHOCOLATE PUMPKIN MUFFINS (ONLY 3 INGREDIENTS!)

- *DO NOT follow the instructions or use the ingredients on the back of the cake mix box.
- Add the cake mix, pumpkin puree, and applesauce to a large bowl. Mix well either by hand or with a hand mixer. When thoroughly blended, fold in chocolate chips (if using). The batter will be pretty dense.
- Line a cupcake tin with cupcake liners and lightly spray each liner with non-stick cooking spray. Spoon batter into each liner until it is about 3/4 of the way full (I was able to get about 12-14 muffins). The shape of each muffin will be a little irregular because of the density of the batter.
- Bake according to the directions on the back of the cake mix box (I baked mine at 350 degrees for 18-22 minutes). Stick a toothpick in the middle of muffin to make sure the middles are done.
