High-Fiber Cholesterol-Free Oat Bran Muffins image

Steps:

  • In a large mixing bowl, stir together flour, oat bran, brown sugar, baking powder, cinnamon, baking soda, and allspice.
  • In a medium mixing bowl combine mashed bananas, milk, egg substitute, cooking oil and vanilla.
  • Add all at once to the flour mixture. Stir until moistened.
  • Put into muffin pans you have sprayed with cooking spray.
  • Bake at 400 degrees for 18 to 20 minutes.
  • Makes 12 muffins. You can add raisins, nuts, shredded carrots, etc.

Steps:

  • In a food processor mix oat bran & flax seed into a coarse flour.
  • Mix dry ingredients & wet ingredients separately, then combine.
  • Then I added
  • 2-3 mashed bananas.
  • 1 cup chopped carrots in food processor.
  • 4 scoops of vanilla protein powder
  • 1 cup of Blueberries, raisins, craisins, dates, or prunes.
  • Pour into 24 muffin tins. Bake at 425 for 14-15 minutes.
