Bob's Magic Marinade Sauce image

Steps:

  • Mix the first six ingredients, and any or all of the rest that intrigue you, with one exception:
  • Just before using, add the aromatics (ginger, herbs, etc). Don't overmarinate. Brush lightly on meat, fish, or portabello mushrooms.
  • The marinade will keep for years (sez Bob) as long as it isn't contaminated by raw meat or fish.
  • Finally, this marinade acts as a preservative if you're taking fish or meat to a potluck barbque.

1 cup soy sauce
1/4 cup hoisin sauce
1/2 cup red wine
1/4 cup sugar
1 teaspoon honey
1 teaspoon ground black pepper
2 fresh garlic cloves (minced)
2 teaspoons ginger (freshly grated) (optional)
1 teaspoon chili (optional)
1/3 cup green onion, finely sliced (optional)
1 bunch cilantro, finely chopped (optional)
1 teaspoon sesame oil (optional)
1 teaspoon five-spice powder (optional)
1 teaspoon star anise, crushed (optional)
1 ounce Scotch whisky (optional)

This recipe came from my Mom's friend. I've never found a better sauce, and allergies prevent me from buying store bought. This is easy to make, delicious, and works with just about anything.

Teriyaki Marinade/Sauce image

Steps:

  • Mix all the ingredients together well.
  • Place the item you are marinating into a large plastic bag and add marinade to cover.
  • Let marinade for 4-6 hours or overnight. Turn bag over every hour or so if you are awake.
  • Extra marinade can be put in a saucepan and reduced over low heat to a sauce consistancy.
  • Stir often to avoid the sugars burning.

THE NORTH END ITALIAN MARINARA SAUCE

From "The North End Italian Cookbook". This is a light, delicate sauce, a little pink in color. Perfect for adding sliced black olives, clams, mushrooms or crab. Use your imagination. This is a slightly spicy sauce due to the red pepper flakes. Good over cooked thin spaghetti or linguini. This sauce can be frozen which makes it perfect for OAMC. ***NOTE*** This may be a classic Italian recipe, but we like it better with only 1/4 cup of oil and two 28 oz. cans of tomatoes, adding in a pound of cooked ground chuck served over penne. You won't taste the mint, but it does add something special.

The North End Italian Marinara Sauce image

Steps:

  • In a large heavy skillet, on low heat, very slowly heat the olive oil, garlic, red pepper flakes, basil and mint.
  • Let cook for about 5 minutes or until garlic is golden brown.
  • If you are using the plum or fresh tomatoes, crush them in your hands or put them in a blender for 1-2 seconds (this will speed up the cooking process and give a smoother consistency to the sauce).
  • Raise the heat to medium high.
  • When oil is really hot, carefully add the tomatoes.
  • Let the sauce come to a soft boil.
  • Add salt and pepper to taste.
  • Add a pinch more of red pepper, basil and mint.
  • Add the chopped parsley.
  • Let sauce simmer, uncovered for about 15 minutes, stirring occasionally with a wooden spoon.

Several years ago I experimented with making steak marinades. I have a few recipes I came up with that seem to be old time favorites! We love steak on the grill, but ever since I made my marinade my husband prefers his steak made this way or not at all! Besides Marinades. I also luv to Rub my steaks. then place them in a marinade sauce before grilling! OH and one last thing -- STEAK Sauce -- what's that -- haha! These steaks require no steak sauce or at least that is what my husband says! NOTE -- the cook time is Marinade time.

My Own Steak Marinade image

Steps:

  • Mix above ingredients well.
  • Pour over meat and marinade anywhere from 2 hours - to even 12 hours.
  • I really like this marinade over Sirloins and Filets.
  • Any Marinade that is left over can be stored in fridge for next time.
  • I like to make a double batch and always have the marinade on hand.
  • After the steaks have marinated, Place steaks on grill - you can baste the steaks with the marinade while they cook - but DO NOT - re-use - the used marinade.

1/2 cup lemon juice
1/3 cup oil
1/3 cup Italian salad dressing
1 tablespoon minced dried onion
1 teaspoon minced dried garlic
2 teaspoons Worcestershire sauce
1 tablespoon sugar
2 teaspoons red hot sauce
