My kids grew up eating this and absolutely love it. They are now serving it to their own families. It's one of my "comfort foods".

Steps:
- Cook ground beef until brown.
- Add onion and celery, cook until almost tender.
- Add remaining ingredients except chow mein noodles.
- Put into a two quart casserole dish.
- Cover and bake at 350 degrees for one hour and fifteen minutes.
- Uncover and layer with chow mein noodles.
- Return to oven, uncovered and bake until noodles are brown, about 15 minutes.

- Preheat oven to 350 degrees F.
- Prepare rice according to package directions (make enough for 4 servings).
- Meanwhile, brown ground beef over medium high heat in large skillet for about 5 minutes.
- Add onion and celery (sprinkle mixture with black pepper and garlic powder if desired) cook for 5 more minutes. Drain beef mixture.
- Spray casserole dish with cooking spray. Pour in beef mixture. Add soup, cooked white rice, and 3 tablespoons soy sauce. Top with chow mein noodles to cover.
- Bake in oven for 20 minutes.
- Top with additional soy sauce and chow mein noodles as desired. Enjoy!

CHOW MEIN HOT DISH
I grew up on this easy meal. I still love it and so do my kids. Use store brand soups, you'll never notice a difference, and because you drain and rinse the meat, you can use cheaper ground beef if you like! If you have a casserole that can go from stove top to oven, this is a one dish meal!!! Enjoy!

My brother and I love this hotdish. Actually, our whole family does, but we do the most! This is a filling meal that you can't get sick of! (So it is great for leftovers!) Plus, it is really easy to make, and all of the ingredients are on hand!

- Brown ground beef.
- During this time, mix together the soups, then add the onion and celery, and add the chow mein noodles in a 2.5 quart dish.
- Drain the gound beef when fully cooked, then combine the meat to the dish.
- Bake at 375 degrees for 45 minutes, covered with foil. (This doubles very well! For the chow mein noodles, just use the full 12 oz. bag)

- In a wok or skillet, melt butter or margarine over medium heat. Add mushrooms, celery, onions and garlic powder; cook until the onions have wilted. Add chicken broth and baby corn. Continue cooking until celery is cooked but still crisp. Stir in the green beans or bean sprouts and soy sauce.
- Mix cornstarch and water together in a small bowl. Slowly stir into vegetables. Sauce should start to thicken a little. Mix in chicken, and heat through.
