EASY POPOVERS
Popovers make even an inexpensive meal fun and special, assures Lourdes Dewick of Fort Lauderdale, Florida.

Steps:
- Using 1/2 teaspoon shortening for each cup, grease the bottom and sides of six 6-oz. custard cups or the cups of popover pan. If using custard cups, place on a 15x10x1-in. baking pan. , In a small bowl, beat eggs; blend in milk and butter. Beat in flour and salt until smooth (do not overbeat). , Fill cups half full. Bake at 450° for 15 minutes. Reduce heat to 350°; bake 30 minutes longer or until very firm. Remove from the oven and prick each popover to allow steam to escape. Serve immediately.

Steps:
- Preheat oven to 475 degrees. Grease 6 popover or large muffin cups.
- Beat eggs in a mixing bowl or food processor.
- Add flour, milk, oil, and salt. Beat until smooth.
- Divide mixture among the cups. They will each be about ½ full.
- Bake for 15 minutes. DO NOT open the oven door.
- Reduce heat to 350 degrees. Again, DO NOT open the oven door.
- Bake for another 25-30 minutes.
- Prick each popover with a fork to let steam escape.
- Remove from oven and serve while hot.

- Place a rack in the middle of the oven and preheat the oven to 450°F. Grease a 12-cup metal muffin tin with butter or nonstick cooking spray. Grease the area between the cups as well as the cups themselves. Make sure the oven is close to temperature before you begin to make the popover batter.
- In a medium bowl, use a whisk to beat together the eggs, milk, and salt. Whisk till the egg and milk are well combined, with no streaks of yolk showing.
- Sift the sugar and flour over the egg mixture and beat with a whisk till frothy; there shouldn’t be any large lumps in the batter, but smaller lumps are fine.
