HOMEMADE CHRISTMAS JAM

A few years ago, I hit upon the idea of presenting family and friends with baskets of homemade jam as gifts. With cherries, cinnamon and cloves, this smells and tastes like Christmas! -Marilyn Reineman, Stockton, California

Homemade Christmas Jam image

Steps:

  • In a Dutch oven, combine cherries, pineapple and raspberries. Stir in the sugar, juices, cinnamon, cloves and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Ladle hot mixture into 12 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

2 cans (8 ounces each) unsweetened crushed pineapple, drained
1 package (12 ounces) frozen unsweetened raspberries, thawed
9 cups sugar
1/4 cup lemon juice
1/4 cup orange juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon butter
2 pouches (3 ounces each) liquid fruit pectin

Make ahead and enjoy for Christmas! A yummy cake that is similar in texture to fruit cake - without the heavy spices and candied fruits. Happy Holidays!

Steps:

  • Cake:.
  • Cream sugar, shortening and soda well.
  • Add eggs, one at a time and mix well.
  • Add sifted flour and mix well. Add nuts, fruit and jam.
  • Bake in 3 layer cake pans or a bundt pan. Bake 1 hour and 20 minutes at 325' or until done.
  • Wrap in aluminum foil and put in freezer until Christmas.
  • Icing:.
  • Put in double boiler and cook until thick. Ice cake.
  • Chill in the fridge until the icing hardens.
  • Wrap in aluminum foil and put away until ready to serve (up to 1 month refridgerated).

1 cup butter
1 cup coconut
1 tablespoon vanilla extract

I created this last year. The cranberries were abundant and particularly good. The OJ and spices make this a wonderful spread on toast, English muffins or even meats.

Steps:

  • Use good canning procedures.
  • Put cranberries and water in large saucepan. Bring to boil. Reduce heat to low, cover and simmer 10 minutes. Press through a sieve, if desired, I don't. Measure 7-1/2 cups prepared fruit into a pot.
  • Stir sugar into prepared fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantlly.
  • Stir in pectin and return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat and skim off any foam with metal spoon.
  • Ladle into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads.
  • Use good canning methods.
