HAWAIIAN TERIYAKI STEAK

- For the steak:
- Combine all ingredients in a resealable plastic bag. Squeeze out as much air as possible and marinate the steak in the refrigerator at least 8 hours or overnight. Remove the meat from the marinade and place on the grill. Grill to desired temperature; medium-rare is best.
- Pineapple Raft:
- Core and slice a fresh pineapple into 1/4-inch rectangles. Melt 3 tablespoons of butter. Place pineapple rafts on the grill and brush with melted butter. Grill until warm, with nice grill marks.
- Serve with the grilled beef, if desired, garnished with scallions.
TERIYAKI STEAK
Skirt steak comes from the short plate. It comes in a long, thin strip or 'skirt'. Sometimes it's hard to find, so if you don't see it out with the other meats, ask your butcher.

- Cut the skirt steak into individual strips for serving. Add the garlic to the teriyaki sauce. In a re-sealable plastic bag, combine the steak and the sauce. Seal tightly and refrigerate to marinate overnight.
- Preheat oven to broil OR preheat a barbecue grill.
- When oven OR grill is ready, remove meat from bag and discard remaining marinade. Place meat on a broiler pan for the oven OR directly on the grill for the barbecue. Cook for about 5 minutes per side, or to desired doneness.

- In a small bowl, combine the first eight ingredients. Remove 1/3 cup to a small bowl for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add tuna. - In a pan, cook cut chicken over medium-high heat until almost done. Salt and pepper to taste.
- Reduce heat to medium and stir in the crushed garlic.
- Add in the soy sauce, honey, and 1 tablespoon of the sesame seeds. Stir until thickened.
- Remove the chicken from the pan, leaving the sauce, and add the vegetables to the pan.
- Cover the pan for several minutes and cook until the vegetables begin to soften, then remove the lid and stir until the sauce is thick again.
- Split the rice, vegetables, and chicken evenly between 4 containers. Top with a sprinkle of sesame seeds and sliced green onion. Refrigerate for up to 4 days.

- Trim steaks of excess fat.
- In a medium glass bowl, combine teriyaki sauce, soy sauce, honey, sweet sherry, garlic, and ginger.
- Add steaks to marinade and turn to coat well.
- Cover and refrigerate for at least 4 hours, but overnight is recommended.
- Drain meat and reserve marinade.
- In a nonstick skillet, cook steaks over high heat 2 minutes each side to seal in flavor.
- For rare steaks, cook another minute per side.
- For medium steaks, reduce heat and cook another 2 to 3 minutes per side.
- For well-done steaks, cook another 4 to 6 minutes per side.
- In a saucepan, bring reserved marinade to a boil.
- Reserve 1/4 cup and pour remaining marinade over steaks during last few minutes of cooking.
- Serve steaks with reserved marinade drizzled over top.
- Garnish with finely chopped green onions.

- Place steak in a shallow dish. In a small bowl, whisk 1/2 cup soy sauce, vinegar, honey, ginger and garlic. Pour half of the marinade over steak; turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing., Meanwhile, transfer reserved marinade to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Set aside., In a large skillet, heat 1 tablespoon butter over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to plate. Chop eggs into small pieces; set aside., In the same skillet, stir-fry rice in remaining butter over medium-high heat. Stir in the peas, onions and remaining soy sauce., Add eggs; cook and stir until heated through. Thinly slice steak across the grain; serve over rice. Drizzle with sauce mixture.

- Preheat oven to 350 degrees F. Toss the rice cereal, green beans, chow mein noodles, almonds and sesame sticks together in a large bowl. Whisk the butter, teriyaki, brown sugar, vinegar, garlic, five-spice, pepper flakes and 1/2 teaspoon salt together in a small bowl until smooth. Pour the sauce over the snack mix and toss well.
- Spread in one layer on a rimmed baking sheet and bake until the mix is toasted and almost completely dry, 16 to 18 minutes, stirring occasionally. Remove from the oven and stir in the wasabi peas. Let cool completely, and then store in an airtight container for up to 3 days.

- In a small bowl, mix all ingredients except meat.
- Pour into a large reclosable plastic bag or a shallow baking dish.
- Trim fat and slash edges of remaining fat at 1-inch intervals on meat.
- Place meat in marinade, turning to coat.
- Close bag or cover baking dish.
- Refrigerate at least 4 or up to 24 hours, turning steak over occasionally.
- Spray broiler pan with non-stick cooking spray or brush w/ oil.
- Remove meat from marinade and place on broiler pan, reserving marinade.
- Broil 4-inches from heat source for 10 minutes, basting often.
- Turn meat over w/ tongs and broil 8 minutes for rare to medium, 10-12 minutes for well done.
CHUCK'S TERIYAKI SAUCE

- In a small bowl, stir soy sauce, water, brown sugar, whiskey, ginger, onion salt, Worcestershire sauce and garlic until brown sugar is dissolved.Place mixture in a plastic bag add meat, poultry or shrimp and marinate for 2 to 6 hours in the refrigerator. Drain marinade and cook meat as desired.
