CIDER-BAKED COUNTRY HAM
This is the best ham I've ever made. I've served it often to family and friends, and each time I get requests for the recipe.

Steps:
- Place ham in a Dutch oven or large kettle. Add cider, peppercorns and bay leaf. Add enough water just to cover; bring to a boil. Reduce heat; cover and simmer for 1 hour., Drain, reserving 3 cups cooking liquid; discard peppercorns and bay leaf. Remove skin from ham if desired; score the surface with shallow cuts, making diamond shapes. Insert whole cloves in the center of each diamond. Combine applesauce, horseradish and mustard; rub over ham., Place ham on a rack in shallow roasting pan; pour reserved liquid into pan. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 140°. Remove from the oven; cover with foil and let stand for 10-15 minutes before slicing.

- In a skillet, heat butter and brown sugar together until butter is melted and brown sugar is dissolved. Add ham steak into pan and cook 3 - 4 minutes on each side until cooked through. Place ham steak on plate and top with fresh or warmed up sauteed apples.

- Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Cover and bake at 325° for 2 hours., Meanwhile, in a large saucepan, combine the cider, honey, vinegar and mustard; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring frequently. Stir in the butter, chili powder and apple pie spice. Set aside 1 cup for serving. , Cook the remaining sauce until thickened; spoon over ham. Bake, uncovered, until a thermometer reads 140°, 30-35 minutes longer. Warm reserved sauce; serve with ham

- Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking.
- Lightly saute, ham on both sides in butter for 3-4 minutes a side. Remove ham steak to a plate and keep warm.
- Add diced apples and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated.
- Slowly wisk in the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

This comforting dish features an array of autumn ingredients-apples, fennel, and sweet potatoes-roasted in the oven to caramelize lightly and bring their sugars to the forefront. The sauce, which mingles apple cider with the meaty browned bits in the skillet, is sharpened with a bit of Dijon mustard to balance the sweetness.

- 1. Remove the pork from the refrigerator and let stand at room temperature while the oven preheats. Preheat the oven to 450°F. Place a large rimmed baking sheet in the oven and heat until very hot.
- 2. To cook the vegetables and apples: In a large bowl, toss the sweet potatoes, apples, fennel, and rosemary with the olive oil to coat. Season with salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables and apples on it. Roast, turning the ingredients over halfway through, for about 15 minutes, or until the potatoes are nicely browned and tender.
- 3. Meanwhile, cook the pork: Season the pork with salt and pepper. Heat a large heavy skillet over medium-high heat. Add the olive oil, then add the chops to the skillet and cook for about 5 minutes per side, or until golden brown and barely pink when pierced in the center with the tip of a small sharp knife. Transfer to a platter (reserving the oil in the skillet) and let stand for 5 minutes.
- 4. Pour off all but 1 teaspoon of the oil from the skillet, leaving the brown bits in the pan. Return the pan to medium-low heat, add the apple cider, and bring to a simmer, scraping up the brown bits with a wooden spoon. Whisk in the mustard and simmer for about 2 minutes to reduce the liquid slightly. Remove from the heat and whisk in the butter to lightly thicken the sauce. Season to taste with salt and pepper.
- 5. Divide the sweet potato mixture among four dinner plates. Place a pork chop alongside the vegetables on each plate. Drizzle with the pan sauce and serve.
CIDER-BRAISED HAM WITH YAMS AND APPLES
Steps:
- In a large skillet, stir together 1 cup cider, mustard, ginger and cloves. Bring to a simmer. Add yams. Cover and simmer until partially tender, 15 minutes. Add ham steak, covering with yams. Arrange apple wedges over top. Cover and simmer until apples and yams are tender and ham is heated though, 10 to 15 minutes.
- Meanwhile in a small bowl, stir together cornstarch and 1 Tbsp. of cider until well mixed. With a slotted spoon, remove ham, yams and apples to a platter, cover with foil to keep warm.
- Stir a little of the hot pan liquid into the cornstarch mix until smooth. Stir cornstarch mix into the skillet. Cook over medium heat ' stirring until slightly thickened, about 1 minute. Divide ham yams among 4 plates. Spoon skillet sauce over. Garish.
