OAT CUISINE! SAVOURY CHEESE, NUT AND OAT FLAPJACKS
Not really Oat Cuisine - Haute Cuisine - but I could not resist the title! These cheesy and nutty oat flapjacks are very tasty and easy to make; a savoury take on the usual sweet flapjack recipe which normally contains syrup, honey, sugar and fruit. Great for lunch box snacks as well as picnics or as an accompaniment to soups, stews and chili. Try to use a good quality mature Cheddar cheese for that essential "cheesy" zing! I have stated porridge oats, however these flapjacks are also wonderful when made with jumbo oats - which are a bit more expensive. To achieve a "full" flavour, it is essential to use both type of nuts; the peanuts give the flapjacks the savoury and almost salty flavour, whilst the pecans or walnuts give a subtle taste, texture and nutty "bite" to these little cheese, nut and oat bars! If you like your food with a bit of a kick, you can add some cayenne pepper, as I often do!

Steps:
- Melt the butter and stir in the mixed nuts, grated carrot, grated cheese, oats, herbs and beaten egg - mix well.
- Season with salt and pepper to taste and mix well. (Season with Cayenne pepper if using).
- Spoon in to a greased and lined 11" x 7" cake or baking tray.
- Press down to smooth and bake in a pre-heated oven 180C/350F/Gas Mark 4 for 25-30 minutes, or until golden brown.
- Allow to cool in the tin and then mark into bars or squares.
- Store in an airtight tin or container for up to 1 week.

SAVOURY OAT SCONES --
I've been making these scones for years -- first in sweet and later in savory versions.Try using cheddar, feta, swiss, blue or any other strong cheese. Use fresh parsley and thyme if you have them, otherwise use dried. I really like using dried onions in this particular recipe, but you can experiment, because the recipe is very friendly to adaptations. The amount of chilie pepper flakes is spot on because you don't want a hot-tasting scone. When you bit into an occasional pepper flake you get a flavor zing!

Steps:
- Whisk, or sift, dry ingredients. Combine butter, milk and egg, add to dry ingredients, stir until just moistened.
- Mix in the cheese, parsley, time, onion and red chilie flakes. Line a baking sheet with parchment paper.
- Place dough in center. Pat to 1/2" thick circle. Using a sharp knife, cut into 8 wedges, but do not separate.
- Bake, 450 degrees, 15 minutes, until light brown. If preparing a day ahead, cool completely, before storing airtight.

SOUSKLUITJIES (DUMPLINGS IN CINNAMON SYRUP)
A traditional South African dessert. Not haute cuisine but great comfort food. Usually served to finish off a Sunday lunch featuring leg of lamb.

Steps:
- Sift together dry ingredients in a bowl.
- Blend in margarine/butter with fingertips until mixture attains crumbled consistency.
- Beat together egg and milk and mix with flour mixture until soft (but not stiff)dough - add more milk as necessary to achieve right consistency.
- Preheat oven to 120C (220F).
- Heat water and 25ml butter in 4 litre (4-quart) pot to boiling and drop spoonsful of dough mixture into boiling water/butter.
- Place lid on pot and boil for 15 minutes - do NOT lift lid to peek!
- Remove dumplings with slotted spoon and place in ovenproof dish or bowl (preferably glass) with lid. Liberally sprinkle with cinnamon sugar.
- Add remaining cinnamon sugar to water in pot and bring to boil.
- Pour cinnamon syrup over dumplings, replace lid and place in preheated oven until serving - at least 30min.

Steps:
- Melt the butter in a large pan, then add the oats, carrots, flaxseed, chia seeds and some seasoning. Leave to cool for about 10 mins. Heat the oven to 200C/180C fan/gas 6 and line a 20 x 20cm baking tin with baking parchment.
- Stir the cheese, eggs and chives into the oat mix. Tip into the tin and scatter over the mixed seeds. Press down with the back of a spoon, making sure it fills the tin to the edges. Bake for 25-30 mins until golden. Leave to cool completely in the tin before cutting into bars.

- Mix margarine and syrup together very gently.
- Mix the dry ingredients pour on the margarine mixture and mix well.
- Spread evenly in a greased Swiss roll tin and press down firmly.

SAVOURY CHEESE & WALNUT SABLES FOR COCKTAILS AND PARTIES!
These delicious crisp and light little savoury biscuits/crackers are a firm favourite in our family, especially when served with the cheese board! They are also great served with soups, dips, & salads. I have used pecans instead of walnuts in the past with the same tasty results. You can omit the chilli or cayenne pepper if you are not keen on the spicy "kick" it gives! They are very nice at Christmas time if you cut them into star shapes & serve them as aperitif snacks, or with cocktails.

Steps:
- Sift the flours, salt, pepper & chillies into a bowl together & mix.
- Rub in the butter until it resembles breadcrumbs.
- Add the cheese & walnuts - mix well.
- Add the beer or milk - mix into a dough.
- Chill for 30 minutes.
- Roll out on a floured board and cut into small rounds.
- Place on a greased baking (cookie) tray and bake in pre-heated oven 180C/360F for about 15 minutes or until golden brown & crisp.
- Sprinkle with seasoning salt or Cayenne pepper if you wish.
- Cool on a wire rack and store in airtight tins.
- Serve with cheese, cream cheese & savoury fillings & dips, or just by themselves!
