- In a large bowl, combine flour, pudding mix, cinnamon, baking powder, baking soda and salt.
- In another bowl, combine eggs, buttermilk, oil, honey and vanilla - then add to dry ingredients.
- Whisk for 1-2 minutes or until combined.
- Fold in chocolate chips.
- Fill greased or lined muffin cups 2/3rds full.
- Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.
- Cool for 5 minutes before removing from pans to wire rack.

Steps:
- Preheat oven to 350°F.
- Grease a 12-cup muffin pan or line with 12 muffin paper liners.
- Sift together the flour, cocoa, baking powder, cinnamon and salt into a large bowl. Stir in the sugar and chocolate chips.
- Lightly beat the eggs in a large bowl, then beat in the milk and oil.
- Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined; do not overmix.
- Spoon the batter into the prepared muffin pan. Bake in the preheated oven for about 25 minutes, until well risen and firm to the touch.
- Let the muffins cool in the pan for 5 minutes, then serve warm or transfer to a wire rack and let cool completely.

- Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. I have doubled the recipe so it should yield 24 muffins, but I think I must not fill them as full because I think I usually get closer to 30 muffins.

- Line 24-30 muffin cups with cupcake papers.
- In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.

- Stir in chips.
- Sppon batter into prepared muffin cups and bake 15-20 minutes or until a toothpick comes out clean.

- Grab a large microwave-safe bowl. Break chocolate into pieces and place into bowl with butter. Microwave for 30 seconds. Stir mixture and microwave for another 30 seconds. Finish off for another 10-15 seconds. Add sugar and whisk vigorously for 1 minute to help dissolve the sugar into the chocolate. It won't be fully dissolved but it will help the process begin.
- Add sour cream and vanilla and gently whisk together until combined. Add eggs and gently whisk until combined.
- In a separate bowl, whisk flour, cocoa powder, cinnamon, salt, and baking soda until evenly combined. Add mixture to wet ingredients and fold together with a spatula until almost combined. Add chocolate chips and finish folding until evenly combined. Don't over mix!
