CINNAMON RAISIN KUGEL

Nothing beats a baked noodle melody with sweet raisins, cinnamon, sugar, and a mess of other great tasting add-ins. This was my request every year at our family gatherings. Sometimes I also add 3 ounces of maraschino cherries and an 8-ounce can of crushed pineapple.

Cinnamon Raisin Kugel image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter an 8x8-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Whisk milk, sour cream, 1/2 cup white sugar, 1/4 cup softened butter, raisins, eggs, and 1/2 teaspoon cinnamon together in a bowl. Mix noodles into the milk mixture; pour into the prepared baking dish.
  • Mix corn flakes, 2 tablespoons melted butter, 2 tablespoons white sugar, and 1/2 teaspoon cinnamon together in a bowl until crumbly; sprinkle over noodle mixture.
  • Bake in the preheated oven until kugel is set in the middle, about 1 1/2 hours. Cut into 2-inch squares.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
  • Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
  • In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.
  • Pour the noodle mixture into the baking dish. Place the filled dish in a larger pan and pour in enough hot water to come halfway up the sides. Cover the entire assembly with aluminum foil. Bake for 45 minutes, then remove the foil and bake for another 45 minutes, or until the custard is just set.

Sweet Cream Cheese Noodle Kugel image

Steps:

  • Set oven to 350 degrees (set oven rack to middle position).
  • Butter a 13 x 9-inch baking dish.
  • Cook egg noodles in a pot until tender-firm, about 6-7 mins; drain and set aside.
  • Place sour cream, cream cheese, cottage cheese, 1/2 cup sugar and salt in a food processor and process until blended, about 20 seconds.
  • Add the eggs and butter and process until incorporated, about 5 seconds more.
  • Pour the cream cheese mixture over the noodles in a large bowl then add the raisins and toss all together.
  • Spread kugel evenly into the prepared pan.
  • In a small bowl or cup combine 1 tablespoon sugar and cinnamon then and sprinkle on top.
  • Bake center oven rack until the top is crisp and the center is firm and risen, and a tester comes out dry when inserted in the middle, about 45-50 minutes.
  • Cool at least 30 minutes before serving.

Steps:

  • In a 9" X 13" Pyrex baking dish, place the butter.
  • Put the hot drained noodles on top of the butter to melt it and toss the noodles to coat, until butter is melted. (If you have noodles that are cold that you want to use, just melt the butter and toss in the noodles).
  • In a mixing bowl, use an electric mixer, beat together the eggs, sour cream, sugar, milk, vanilla and salt until the mixture is well blended.
  • Pour the mixture over the buttered noodles in the baking dish and spread evenly in the pan; all noodles should be coated.

Preheat oven to 350° F. Step 2. Combine cream cheese and butter in large, heavy-duty saucepan over low heat, stirring until melted. Remove from heat. Add eggs, one at a time, stirring well after each addition. Stir in evaporated milk, 1/2 cup sugar and vanilla extract. Stir in noodles and raisins. Pour into ungreased 13 x 9-inch baking dish.
