- In a small bowl mix yeast and warm water. Add about a teaspoons of the granulated sugar and a teaspoons of flour. Stir and set aside to "proof."
- Within about 10 minutes, the yeast should be rising up the sides of the bowl.
- While the yeast is proofing, Combine the lukewarm milk, the rest of the 1/2 cup of granulated sugar, the salt, and the veg. oil.
- Add enough flours to make a thick batter (like a thick pancake batter). Normally, I do this all in my Kitchenaid stand mixer and beat it on med. speed for 2 minute to get some air into it and get the gluten starting to form.
- Add your eggs and beat them into the batter.
- Stir in the yeast.
- Add enough of the remaining flour to make a soft dough. If you are using part whole wheat flour, add that to the batter first.
- Turn your oven on so that it preheats to about 200 degrees ("warm"). Then turn the oven off.
- Knead your dough on a floured surface until it is smooth and satiny. Keep working in what's left of the 5 cups of flour until the dough stops sticking to your hands and you can form a nice round ball out of it that will hold it's shape pretty well. It may actually take more than the 5 total cups of flour.
- Butter a large bowl (basketball size) or spray it with cooking spray.
- Place dough in bowl and grease the top of your ball of dough. Cover the bowl with plastic wrap that you have greased, and then over that I recommend putting a cotton dish towel that you have wet down and wrung out.
- Slide the bowl into the warm oven, making sure the oven has been turned off for at least 5 minute before you put the dough in to rise. Rising will take approximately 1.5 hours, but start checking after an hour. When the dough has doubled in size or reached the top of the bowl, it is ready to shape.
- To shape the dough, turn it out onto a lightly floured surface. It will deflate, which is normal. Sprinkle a little flour over the top and roll the dough out to a rectangle that is about 24" long x 12" wide.
- Spread the dough with 1 stick of the softened butter.
- Mix together the filling ingredients. Save back about 1/4 cup and generously sprinkle the rest over the dough. Use your hands to pat the filling mix down into the dough a bit.
- Fold the dough into thirds, so that you have an oblong about 24" x 4". Cut this into about 15 equal-sized strips.
- Put 1 tablespoons of melted butter into the bottom of 3 (9x5) loaf pans.
- Sprinkle 1/3 of the remaining filling mix over the top in a light layer.
- Each pan will hold about 5 of the strips of dough. Turn them on their sides and snake them back and forth into the pan until they fit. It's not an exact science, so just play with it.
- Cover and let rise until the dough reaches the top of the pan-about another 30 min or so.
- Bake at 375 for about 20-25 minute (If you have dark pans, reduce temperature to 350.) They should be golden brown, but not burnt. If after 20-25 minute you aren't sure if they are done in the middle, turn the oven off and let them sit in there for another 5 minute The tops will not brown anymore, but the insides will finish cooking.
CINNAMON SUGAR DONUTS
These donuts were inspired by the freshly fried donuts Chef Solomonov enjoys eating at the Jersey Shore boardwalk. Egg yolks, buttermilk, and melted butter make the cake rich and soft. Turning loose cake batter into donuts takes some skill (and lots of dusting flour!), but Solomonov is here to help you nail it.

- Batter: In the bowl of a stand mixer fitted with a paddle attachment, add egg yolks and sugar. Mix on medium speed just to combine, then increase speed to medium-high and beat until mixture is pale and fluffy and ribbons start to form, about 3 minutes. Reduce to medium speed, then slowly stream in the melted butter, followed by the buttermilk; mix until combined, about 5 seconds.
- Turn the mixer off. Add the dry ingredients: flour, baking soda, baking powder, salt and baharat. Mix on low speed just to combine, about 30 seconds. Increase speed to medium and continue mixing until dough is smooth and starts to pull away from the sides of the bowl, 20 to 30 seconds.
- Tape a 12" x 16" sheet of parchment paper to your work surface to keep it from slipping. Generously dust the parchment with flour. (Keep extra flour nearby to use as needed.) Scrape down the paddle attachment, then turn all the batter out onto the floured surface. The batter will be very sticky and loose. Dust the top of the batter with more flour, all the way to the edges; flour your hands thoroughly. Place a second piece of parchment paper on top of the flour-dusted batter. Roll the batter between the parchment paper into a ½-inch thick rectangle, about 10" x 14". Using only the weight of the rolling pin itself, very gently ease it along the parchment paper-first from top to bottom, then from side to side-to evenly flatten the batter without rolling it too thin. Once you've achieved the right thickness, slide the dough (still sandwiched between parchment) onto an overturned baking sheet. Freeze for 30 minutes and up to overnight.
- Preheat the frying oil: In a large, heavy-bottomed pot or Dutch oven over medium-high heat, add 2-3 inches of oil. Clip a deep fry thermometer onto the side of the pot and heat oil to 350 F. After at least 30 minutes, remove dough from freezer. Generously dust your work surface with flour. Peel the top layer of parchment off the dough. (It's ok if some of it sticks-just be gentle and persistent!) Flip the baking sheet with dough onto the floured surface, so the bottom piece of parchment is now on top. Remove this layer of parchment and use a pastry brush to brush excess flour off dough.
- Cut donuts: Use two sizes of ring cutters to quickly cut out the donuts. Flouring the cutters well and often to prevent sticking, stamp out as many 2.75-inch circles as possible; then use the 1-inch cutter for the holes. The dough scraps can be gathered together, re-rolled and cut for more donuts.
- Fry the donuts: Carefully lift the dough rings with a spatula and slide them into the oil, frying about 4 at a time, depending on the size of your pot. After about 1 minute, the edges will begin to brown; flip the donuts and fry for another minute, then flip again and fry until golden brown and delightfully puffy, another 30 seconds. (Total frying time for the donuts will be about 2½ minutes.)Transfer donuts to a rack set over a paper towel-lined baking sheet to drain. Repeat with remaining donuts and donut holes. (Donut holes take 60 to 90 seconds and tend to flip themselves.)
- In a large bowl, combine sugar, light brown sugar, cinnamon, nutmeg, and salt. One by one, toss the hot donuts in the sugar mixture until well coated. Serve immediately. After the donuts are cool, store in an airtight container for up to 24 hours.
CINNAMON SPIRALS
I got this from a Good Housekeeping cookbook called The Great Christmas Cookie Swap Cookbook. They were a huge hit as gifts and they smell wonderful when baking. They are not very sweet so they are a nice counterbalance to chocolate cookies. I did sprinkle some extra sugar over them before baking because I like them sweeter!

- In a large bowl, with mixer at medium speed, beat butter and cream cheese till creamy, about 2 minute Reduce speed to low; gradually beat in flour and salt until well mixed, occasionally scraping bowl with ruber spatula.
- Divide dough in half. On sheet of plastic wrap, pat 1 peice of dough into small rectangle; wrap tightly and refrigerate 1 hour or until dough is firm enough to roll ( or freeze for 30 min,). Repeat with remaining dough.
- Meanwhile, in a small bowl, stir sugar and cinnamon until blended.
- On lightly floured surface, with floured rolling pin, roll 1 peice of dough into 15" by 12" rectangle. Sprinkle half of cinnamon sugar mixture evenly over dough. Starting from long side, tightly roll dough jelly-roll style. Brush last 1/2 in of dough with water to seal edge. Cut log crosswise in half. Slide logs onto ungreased cookie sheet; cover with plastic wrap and refrigerate 2 hours or until firm enough to cut. (or freeze for 45 min.) Repeat with remaining dough.
- Preheat oven to 400*F. Remove 2 logs from freezer; with serrated knife, cut each log crosswise into 1/4 in thick slices. Place cookies 1/2 in apart on two ungreased cookie sheets.
- Bake cookies until lightly browned, 12 to 14 min, Transfer to a wire rack to cook. Repeat with remaining two logs.
