CITRUS SALAD

Steps:
- Place a sieve over a medium bowl. Hold an orange over the bowl, and using a paring knife, cut along the membrane on both sides of each segment. Free the segments and let them fall into the sieve. Repeat with the grapefruit. Squeeze the membranes over the bowl to extract as much juice as possible, reserving the juices in the bottom of the bowl. Place the fruit segments and fennel in a salad bowl.
- In a blender or the bowl of a small food processor, blend together the oil, basil and 3 tablespoons of the reserved juice until smooth. Season with salt and pepper, to taste. Pour over the fruit and fennel. Add the chopped walnuts and toss until all the ingredients are coated.

This recipe came from Michael Chiarello's Napa's Style it's a perfect seasoning for poultry and vegetables (so far that's what I've tried it on) Let me know if you use it on something different! :)

- Mix all of the ingredients.
- Spread evenly on a cookie sheet and bake for 2 hours, or until completely dried.
- Grind in a food processor, and store in a covered container.

- Heat oven to 200 degrees. In a bowl, mix salt and zest. Spread mixture on a parchment-lined baking sheet and bake until citrus is dry, about 1 hour. Let cool completely.

CITRUS BAKED SALMON
Steps:
- Preheat the oven to 375 degrees F.
- In a large 9 by 13 shallow baking dish place 1 lemon slice with 1 orange slice side by side so you'll end up with 4 groups. Each salmon fillet will have its own bed of citrus. Season each fillet with salt and pepper then place each salmon fillet over the 2 slices of lemon and orange. In a small bowl mix the dill, sun-dried tomatoes and tomato oil. Divide mixture on top of the salmon fillet, then drizzle with the wine. Place the baking dish in the oven and cook for 8 to 10 minutes.
CITRUS-GINGER SALT
This flavored salt is great as a finishing touch to steamed veggies or other dishes. Note - use sea salt, Himalayan salt, or kosher salt. Table salt is not recommended.

- Place a sheet of parchment paper on a baking sheet and spread the grated ginger and orange rind on the paper.
- Bake at 200 degrees Fahrenheit for 30 minutes. It should be completely dry.
- Combine the dried ginger and orange rind with the salt.

- In a medium dry bowl, combine all ingredients making sure to not let any water touch them as it will dissolve the salt.
- Pour mixture into an airtight container and store in a cool dry place.
- To use:
- Just before showering, swirl ingredients together with your fingertips to mix.
- Clean body completely and just before exiting shower, apply Citrus Salt Body Scrub to body in a firm circular scrubbing motion with hands or a soft washcloth.
- Rinse off the mixture and pat body dry with a clean towel.

- Preheat the oven to 250°. Spread lemon zest on a medium rimmed baking sheet.
- Bake the lemon zest for 15 minutes, or until completely dry, stirring halfway through baking.
