Steps:

  • Puree oats, yogurt, frozen banana, coconut water, vanilla seeds, and a pinch of salt in a blender until smooth. Serve, topped with fresh banana, coconut, and a drizzle of syrup.

2/3 cup old-fashioned rolled oats
2/3 cup low-fat Greek yogurt
1 large banana, sliced and frozen, plus sliced fresh banana, for serving
1/2 cup coconut water, chilled
1/2 vanilla bean, seeds scraped, pod reserved for another use
Coarse salt
Toasted flaked coconut and pure maple syrup, for serving

Steps:

  • Preheat oven to 375°F
  • Line a muffin tin with muffin tin liners.
  • In a food processor, add in oats and pulse until the texture resembles flour.
  • In a separate bowl, mash bananas until you get a smooth mixture.
  • Heat coconut oil over a stove or in the microwave until it is melted.
  • While coconut oil is heating, add sugar and eggs into banana mixture and stir well.
  • Add the melted coconut oil into the bowl with the previous mixture.
  • Now, add in all dry ingredients and mix well.
  • Fill each individual muffin cup with ¼ cup of mixture.
  • Bake for 35 minutes or until golden brown.
  • Enjoy!

Steps:

  • Prepare oatmeal according to package directions on stove top or in microwave, using oats and water.
  • Peel and slice banana in half. In a separate bowl, mash half banana with a fork and stir into the oatmeal along with coconut extract. Stir in sugar or sugar substitute if desired. Slice the other half of banana into slices.
  • Top oatmeal with unsweetened coconut and banana slices, and chopped walnuts, if desired.

Steps:

  • Mash 1 banana in a bowl with a fork until smooth. Stir in the oats, cinnamon, maple syrup, milk and peanut butter. Mix well, then cover and chill overnight.
  • The next morning, stir the porridge, adding another splash of milk if the mixture is quite stiff. Divide between two bowls. Slice the remaining banana and scatter this over the porridge, drizzle with more nut butter and sprinkle over the almonds. Top with spoonfuls of yogurt, if using, and sprinkle with a pinch more cinnamon before serving.
