GARLIC-CRUSTED COD FISH

This recipe comes from The Black Dog Summer on the Vineyard Cookbook. Just buy the cod and parsley; and you probably have everything else at home. Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

Garlic-Crusted Cod Fish image

Steps:

  • Preheat oven to 400 degrees F.
  • Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
  • Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
  • Mix to moisten the crumbs and seasonings.
  • Dredge each fish fillet in the beaten egg first.
  • Then dredge each fish fillet into the crumb mixture.
  • Place the coated fish fillets in an oiled roasting pan for the oven.
  • Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
  • Serve with lemon wedges.

1 tablespoon unsalted butter, plus a little more to oil roasting pan
2 tablespoons extra virgin olive oil
6 garlic cloves, chopped

Baked Cod with Garlic Mayonnaise Recipe - (3.8/5) image

Steps:

  • Preheat oven to 392 degrees fahrenheit (200C) Place Cod skin down on a baking dish, if you are not using Cod rub oil on the base of the fish before putting it on the dish. To prepare the sauce, chop or blend garlic till paste like. Add in the rest of the ingredients and mix well. Spread the mixture over the fish. Bake fish for 15 minutes or till cooked. Served immediately. Note: If you are using Cod, you may notice a lot of oil at the base. It's from both the Cod and the Mayo. Just dish it out and serve on another dish. Oily it may seem but it's not oily but moist inside. However if you are using other white fish, it will not be as moist inside.

1 Cod (I used the tail part and it's about 7" long)
A dash of pepper and salt
1 teaspoon olive oil if not using Cod
3 garlic cloves
1 teaspoon garlic powder (optional)
2 tablespoon mayonnaise (I use Japanese Mayo - the one with the baby)
1/2 teaspoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut 4 large squares of heavy-duty aluminum foil. Brush each fillet with olive oil and sprinkle with salt and black pepper. Place each fillet in the center of an aluminum foil square. Lay lemon slices down the length of each fillet and sprinkle garlic slices and chives over the top. Fold foil over the fish and turn the edges over 2 or 3 times; flatten to seal the packets.
  • Bake in the preheated oven until the fish is opaque and flakes easily with a fork, 15 to 20 minutes.

Steps:

  • Fillets should be cut to make 8 servings.
  • Place the fish fillets on a rack in a broiler pan.
  • In a small pan cook and stir the garlic in the margarine and oil until golden brown, (DO NOT overcook). Remove garlic and set aside.
  • Drizzle the margarine mixture and lemon juice over the fillets then sprinkle with the salt.
  • Set oven control to broil. Broil the fish with the tops of the fillets about 3-inches from the heat until the fillets flake easily with a fork, about 10 to 12 minutes.

Baked Cod with Garlic And Herb Ritz Crumbs image

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
  • Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
  • Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 450°F
  • Lightly grease a rimmed baking sheet with nonstick cooking spray; set aside.
  • In a medium bowl, combine the cracker crumbs and 1 tablespoon of the parsley, dill or basil; Set aside.
  • In a separate small bowl, combine the remaining 1 tablespoon parsley, dill or basil with the mayonnaise, garlic, and lemon zest and juice; Set aside.
  • Season the fish fillets with salt and pepper to taste.
  • Place on the baking sheet, spacing the pieces about ½ inch apart.
  • Brush the tops and sides of the fish with the mayonnaise mixture, then press the cracker crumbs into the mayonnaise.
  • Bake for 8 to 15 minutes, or until the crumbs are golden brown and the fish flakes apart when gently prodded with a paring knife.
  • If the cracker crumbs brown before the fish is cooked, cover the fish with aluminum foil.
  • Serve hot with the lemon wedges.
