Steps:
- In a large saucepan over medium heat, melt butter. Cook onion in butter until softened. Stir in potatoes and broth, bring to a boil, then cover, reduce heat and simmer 15 to 20 minutes, until potatoes are tender.
- Puree potato mixture in a blender or food processor or using an immersion blender; return to pot over medium heat. Stir in cream, cheese, dill, pepper, salt and cayenne. Bring to a low boil and cook, stirring, until thickened, 5 minutes.

OLD-FASHIONED POTATO SOUP
This soup is closest to the soup I remember as child. I have seen many renditions of it surface in several bistros. It is easy and the method can be applied to broccoli or cauliflower.

Steps:
- Melt butter in a saucepan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- While the onions are cooking, place the diced potatoes, carrots, water and chicken soup base (or vegetable base; see Cook's Note) in another pot and bring to a boil. Cook until vegetables are tender, about 10 minutes. Do not overcook. Season with ground black pepper to taste.
- Add the flour to the cooked onions to make a paste. Cook, stirring constantly, for 2 minutes. Gradually add the milk and stir well. Cook over low heat stirring constantly until warmed through. Add the potato and carrot mixture. Stir in the parsley and thyme and heat through. Serve hot.

- In a large stock pot combine potatoes, onions, celery, bouillon cubes and enough water to cover all ingredients. Bring to a boil and simmer on medium heat until potatoes are with in 15 minutes of being finished.
- Add half and half, bacon, cream of mushroom soup and stir until creamy. Add cheese and stir until completely melted. Simmer on low until potatoes are done.

COLORFUL POTATO SOUP
I had to post this because it is one of my daughter's favorite meals. We top it with shredded cheese, and have yeast rolls on the side. It isn't spicy, so most kids like it. This recipe came from "Now You're Cookin" Cookbook.

Steps:
- Saute onion in butter in a Dutch oven over medium heat; stirring constantly, until tender.
- Dissolve bouillon cubes in boiling water. Add bouillon and broth to dutch oven. Bring to a boil. Add potato; cover, reduce heat and simmer for 15 minutes.
- Stir in carrot, salt, and pepper; cover and simmer 15 minutes or until potato is tender.
- Combine flour and 2 tbsp cooking liquid, stirring with a wire whisk until smooth. Stir flour mixture into soup mixture; cook, stirring constantly, until thickened and bubbly. Reduce heat to low, stir in sour cream and parsley. Cook just until thoroughly heated.
- Serve in individual bowls. Top with cheese.

SWEET POTATO AND KALE SOUP
This soup is filling and great as leftovers. Simple to make and it makes a lot, perfect for a cold day. The great thing about this recipe is that it's adaptable. Change the spices or the color of the onion or add different spices or even add another vegetable to up the nutrition value.

- Cook onion in cooking spray on medium high for several minutes until translucent.
- Add garlic to pot, cook for 30 seconds.
- Add potatoes to pot, add enough water to cover potatoes.
- Add spices and vegetable broth powder.
- Simmer for 10-15 minutes until potatoes are fork tender and able to be mashed easily.
- Add kale to pot and simmer for 2 minutes, or until kale is wilted.
- If you like, mash some of the potato chunks to thicken the soup.

SIMPLE CARAMELIZED ONION POTATO SOUP
Peel potatoes and dice into large chunks (this helps them cook faster) and chop celery. Add both into soup pot with the chicken broth. Simmer until veggies are tender and potatoes can be easily pierced with a fork, about 25 minutes. While your veggies are simmering, in a separate pan, add the chopped onions along with butter. Cook them very low and slow, stirring frequently so they don't burn or brown, but develop a deep caramel color, for 15-25 minutes. In the last 5 minutes or so, add the chopped garlic, and cook for the remaining few minutes. When your potatoes and celery are done, add the caramelized onions and garlic to the pot, and transfer to a food processor or blender. Blend until smooth. Return blended soup to the pot, and add your milk or cream until the desired thickness and creaminess is achieved (this all depends on preference!) About 2 cups milk or 3/4 cup heavy cream is a good ballpark, but adjust based on preferences! Serve immediately, with parmesan cheese and chopped chives!

- Heat oil over medium-high heat in a large, deep saute pan until shimmering.
- Add potatoes, then onion; saute, stirring very little at first, then more frequently, until squash start to turn golden brown, 7 to 8 minutes.
- Reduce heat to low and add butter, sugar and garlic; continue cooking until all vegetables are a rich spotty caramel color, about 10 minutes longer.
- Add cayenne pepper; continue to saute until fragrant, 30 seconds to 1 minute longer.
- Add broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until potatoes are tender, about 10 minutes.
- Using an immersion blender or traditional blender, puree (adding fresh rosemary)until very smooth, 30 seconds to 1 minute. (If using a traditional blender, vent it either by removing the lid's pop-out center or by lifting one edge of the lid. Drape the blender canister with a kitchen towel. To 'clean' the canister, pour in a little half-and-half, blend briefly, then add to the soup.)
- Return to pan (or a soup pot); add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.

POTATO SOUP, DAD'S WORLD FAMOUS
My family loves this soup. They call it Dad's world famous potato soup. I wouldn't go that far, but it is pretty awesome. Make the potatoes a little different in size when you cut them up, it adds to the complexity of the soup.

- Combine water, celery, carrots and half of the salt and pepper in a large soup kettle.
- Heat on high heat to a boil then turn down heat to medium high and boil for 5 minutes.
- Add potatoes and half of ham. When the kettle boils again it should take about 15 minutes until the potatoes are tender on a low boil. Start checking at this time. You should just be able to put a fork into the potatoes with little resistance.
- In a medium sauce pan add the butter, onions, left over salt and pepper. Cook on medium high heat stirring the onions about every 2 minutes for about 10 minutes till soft. You can tell they are done when the bottom of the pan starts to brown a little.
- Keep the pan on the heat and shake the flour over the onions. Now stir it into the onions for ½ minute. Pour in the milk and 3 cups of the potato water. Whisk it in till its well mixed, about ½ minute. It will be thick. Now add this and the rest of the ham to the potato's when they are finished. Stir for about ½ minute till it's well mixed.
- Cook over med high heat stirring the bottom of the pan constantly until you reach a boil. Boil for 1 minute and remove from heat.
- Remove 2 cups of the potato mixture and mash them with a little of the soup juice in the sauce pan. Add the mashed potatoes and the parsley to the kettle and check your seasonings. The mashed potatoes will thicken the soup some more and add more depth to it.
- Serve with shredded cheese on top if you like and crusty bread. We like smoked cheese with ours.
- If you have a ham bone boil it with 1 chop carrot, 1 chopped celery stalk and 1 chopped onion for 45 minutes in the gallon (plus 1 cup) water. Remove the bone to a plate to cool and strain the water before making the recipe. Add the ham bone meat when soup is finished.
SPINACH POTATO SOUP
The potatoes make this soup thick and hearty, while the spinach makes it healthy. If you want, cut down on the butter and use some broth instead of water to maintain some thickness

- Cut potatoes in half and then into 1/2 inch thick slices and cook in pot for 20 minutes Add spinach and cook about 10 minutes (if spinach starts to lose its color, it is overcooked) In batches, puree soup in a food processor, leaving out 4-6 cups of the liquid Process until smooth, adding butter as needed.
- Put the puree back in the pot and add liquid until the soup reaches desired consistency.
