EASY LEMON AND GARLIC BROCCOLI
This is an easy recipe for a delicious broccoli side that takes just a few minutes to make.

Steps:
- Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
- While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with black pepper, toss to combine, and season with a bit more pepper if desired.

Steps:
- Cut broccoli into 1x2-inch pieces.
- Cut zucchini into 1/2-inch thick slices.
- Cut each green onion into 2-inch pieces (if root ends are too thick, cut each lengthwise in half).
- In 8-quart Dutch oven over medium heat, in 1/3 cup hot salad oil, cook green onions, stirring frequently, until tender about 3 minutes.
- With rubber spatula, stir in broccoli and 1 1/4 teaspoon salt until broccoli is coated with oil.
- Add water; cover Dutch over and cook broccoli 5-8 minutes, stirring occasionally, until tender-crisp.
- Remove vegetables and liquid to bowl.
- In same Dutch oven over medium heat, in 1/4 cup hot salad oil, cook zucchini, basil, and 1 teaspoon salt, stirring occasionally, until zucchini is tender-crisp.
- Return broccoli mixture to Dutch oven; add soy sauce; mix well.
- Line large platter with lettuce leaves.
- Spoon vegetables onto lettuce-leaf-lined platter.
- Serve hot or refrigerate to serve cold later.

- In 5-quart Dutch oven, mix remaining onions, the broccoli, cream cheese, bell pepper and red pepper sauce. Cover; cook over medium-low heat about 20 minutes, stirring once halfway through cooking, until sauce chips are melted. Transfer to ungreased 2- to 3-quart casserole.
- Bake uncovered 20 to 25 minutes or until vegetables are tender. Sprinkle reserved onions around outer edge of casserole; bake 5 minutes longer.
