CHEF JOHN'S CHICKEN MARSALA
Certain dishes have a special place in my heart and this is one of them. The first real restaurant job I had in San Francisco was at a small place called Ryan's Cafe. It was run by a husband and wife team, Michael and Lenore Ryan. They were true 'foodies' before that term had even been coined. This chicken Marsala dish was the most popular dish on the menu and the first one that I was taught.

Steps:
- Season chicken breasts all over with salt and pepper.
- Melt 1 1/2 tablespoons butter and olive oil in a skillet over medium heat. Cook chicken breasts, skin-side down, in hot butter and oil until browned, about 5 minutes. Flip and cook until breasts are almost cooked through, about 5 minutes more. Transfer chicken breasts to a plate.
- Melt 1 1/2 tablespoons butter in the same skillet over medium-high heat. Saute mushrooms with a pinch of salt and a pinch of pepper in hot butter until mushrooms are golden, 5 to 7 minutes. Add minced shallot; cook and stir until softened, 2 to 3 minutes. Sprinkle flour over the top and cook and stir until the bitterness of the flour cooks off, 3 to 4 minutes.
- Pour wine into skillet and bring to a boil; cook and stir until wine reduces and sauce thickens, 3 to 4 minutes. Add chicken stock; bring to a simmer and cook until slightly reduced, 3 to 5 minutes more.
- Return chicken breasts to the skillet, reduce heat to low, and cook chicken, turning once, until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from heat.
- Move chicken to one side of the skillet and tilt the skillet so that the sauce pools at the bottom. Stir parsley and 1 teaspoon cold butter into the sauce, stirring constantly, until sauce is shiny and butter is completely melted. Transfer chicken breasts to plates and spoon mushrooms and sauce over the top.

- In a large saucepan, saute mushrooms in 2 tablespoons butter for 4-5 minutes or until tender. Add garlic; cook 1 minute longer. Add water and wine. Bring to a boil; stir in pasta mix. Reduce heat; simmer, uncovered, for 10 minutes or until pasta is tender. , Meanwhile, flatten chicken to 1/2-in. thickness. In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet, cook chicken in oil and remaining butter over medium heat for 4-5 minutes on each side or until no longer pink. - Heat a large pot over medium-high heat.
- Add 2 tablespoons of olive oil and chicken breast. Season with salt and pepper to taste.
- Cook until chicken is no longer pink. Remove and set aside.
- Add the remaining tablespoon of oil, and the mushrooms and onion. Season with salt and pepper to taste. Cook until onions are browned, stirring occasionally.
- Return the chicken to the pot. Add the stock, cream, wine, and pasta, bring up to a simmer, and cover.
- *Marsala wine can be purchased at most grocery stores near the dessert or sweet wines and gives the dish a distinct flavor. However, if you can't get your hands on Marsala, you can substitute 1 cup of white wine (240 ml) plus 1 ½ tablespoons of brandy.
- Simmer until pasta is tender, about 15-20 minutes, stirring occasionally.
- When pasta is tender, stir in parmesan cheese until smooth. Remove from heat.
- Garnish with fresh parsley.

- In shallow dish, combine flour, thyme and pepper.
- Coat chicken in flour mixture; reserve remaining flour mixture.
- In large nonstick skillet, heat olive oil over medium-high heat.
- Add chicken; cook until browned and internal temperature reaches 165*, about 3 to 4 minutes per side.
- Remove chicken from skillet; cover to keep warm.
- In same skillet, add wine; stir to scrape browned bits from bottom of pan.
- Stir reserved flour mixture into broth.
- Add broth, mushrooms, onion and garlic; bring to boil.
- Reduce heat and simmer stirring occasionally until vegetables are tender and sauce thickens, about 3 to 4 minutes.

MARSALA AND MUSHROOM PASTA BAKE

- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Bring a large pot of salted water to a boil on the direct heat side of the grill and cook the pasta 3 minutes less than the package directions. Place a large sauté pan over the direct heat side of the grill. Add the butter and once melted, add the mushrooms and a pinch of salt. Stir and cook for 1 minute so the mushrooms soak up some of the butter. Then add the onions, garlic and thyme. Stir and cook until the onions are translucent and the mushrooms are slightly browned, 2 to 3 minutes. Stir in the flour, coating all of the vegetables. Deglaze the pan with the marsala, smoothing out any lumps. Stir in the vegetable stock and milk. Season with salt, pepper and nutmeg and bring to a simmer.
- Add the cooked pasta, parsley and mushroom marsala mixture to an extra-large mixing bowl. Mix to combine well, then transfer back to the sauté pan. Top with the mozzarella and Parmesan. Place the sauté pan on the indirect heat side of the grill, close the grill with the lid and bake until the cheese is melted and golden brown in some spots, 3 to 5 minutes. Remove from the grill and serve!
CHICKEN MARSALA

- Season the chicken tenders with salt and pepper, then dredge in the flour, shaking off excess. Heat a 12- to 14-inch nonstick pan over medium-high heat. Add the olive oil and brown each side of the chicken until golden brown, 2 minutes a side (you want to actually undercook the chicken a bit; it will finish in the pan later). Transfer the chicken to a plate.
- To the same pan, add the cremini mushrooms, butter, dried porcini and shallots and cook until deeply caramelized, about 15 minutes.
- Meanwhile, in a small bowl, whisk the gelatin and 1/4 cup of the broth together and let sit to bloom.
- Add the garlic to the pan and cook for another 20 seconds. Deglaze with the Marsala, scraping up any bits. Whisk in the remaining broth and the gelatin mixture and bring to a simmer. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
- Nestle the browned chicken in the pan and gently simmer for 3 minutes. Top with the fresh parsley and lemon juice. Serve with warm crusty Italian bread.
COMPANY CHICKEN MARSALA WITH FETTUCINE

- In a shallow dish or bowl, mix together the flour, salt, pepper, Italian seasoning and oregano.
- Coat chicken pieces in flour mixture.
- In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. (I do this in 3 batches for about 6-7 mnutes each).
- Remove chicken and microwave 5-10 minutes to be sure it is cooked through if needed.
- Rinse saucepan, add 1/2 cup butter and 4 T olive oil and garlic.
- Add marsala, sherry, and mushroom.
- Bring to boil.
- Simmer a bit to reduce liquid, then add cream or half and half.
- Thicken with cornstarch and cold water if needed.
- Place chicken back to pan and simmer on low while pasta is cooking.

- Mix flour, salt, and pepper in a shallow dish. Press chicken tenders in the flour to coat completely; shake gently to remove any excess flour.
- Heat olive oil in a large skillet over medium, tilting the pan to coat the cooking surface in oil. Melt the butter in the skillet. Cook the chicken tenders in the hot butter until evenly browned, 7 to 8 minutes.

- Preheat oven to 150°C/300°F. Clean and slice mushrooms. Peel and mince shallots and garlic. Finely chop sage leaves. Remove leaves from marjoram sprigs and finely chop. Roughly chop parsley. Slice lemon. Place flour in a bowl.
- Place chicken breasts between two pieces of plastic wrap on a cutting board. Using the flat side of a meat tenderizer, pound cutlets until thin, approx. 1⁄4 in. thick. Then cut in half. Season with salt and pepper on both sides, then dredge each cutlet in flour, gently shaking to remove any excess. Bring a large pot of salted water to boil.
- Drizzle olive oil and add one third of the butter into a frying pan over medium-high heat. Once it foams and the foam starts to subside, add half the chicken cutlets. Cook, flipping once, until golden and cooked through, approx. 3 min. on each side. Transfer to a baking sheet and place in the oven to keep warm. Wipe out the frying pan with some paper towels, then add a fresh drizzle of olive oil and half the remaining butter. Cook the remaining chicken as the previous batch and transfer to the oven while you prepare the sauce.
- Add remaining butter to the same pan. Once melted, add mushrooms. Let cook until brown, then add shallots and garlic and season with salt and pepper. Once fragrant, turn heat to high and add Marsala wine. Use your cooking spoon to scrape up any brown bits from the bottom of the pan. Add broth and let simmer until sauce is reduced by about half and starts to thicken, approx. 10 min.
