COMPANY QUICHE LORRAINE WITH BACON AND SWISS
This is not a dish to make very often due to the calories, but a dish that I do enjoy serving for special occaisions and company. It's very rich and elegant, and when sliced into fairly small slices and served with salad and fresh fruit, it really isn't that terrible for you. Besides, we all deserve a little spoiling now and...

Steps:
- 1. Place pastry into 9" pie dish and flute edge. Bake in hot 450 oven for 6-7 minutes til lightly browned. Remove from oven and reduce to 325 degrees. Fry bacon til crisp, drain, and crumble into small pieces. Place on bottom of pie shell. Top evenly with shredded cheese. In medium bowl, beat eggs, whisk in heavy cream, salt, pepper and nutmeg if desired. Pour over slowly and evenly. Bake at 325 for 35-40 minutes until almost set in the very middle. VERY center should jiggle just a little. (But not runny, just like jello.) *Let cool 25 minutes before serving. Perfect amount of time to make some salad and cut up some fresh fruit. At least 8 servings. *You can also bake this in a tart pan, but since I don't have any, I can't give you any directions on that... (yet...) Christmas is coming... ;)

Steps:
- In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
- Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
- Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.

- Cook bacon: Line a baking sheet with aluminum foil (makes pans easier to clean). Lay bacon on the sheet, careful to not overcrowd. Cook bacon directly on the sheet and not on a rack (it cooks faster and stays moister this way). Cook ~13-20 minutes (no need to turn) depending on thickness or until desired doneness. Lay bacon on rack or on paper towel lined plate. Cool and slice.
- Layer the shallots, bacon, and cheese in the frozen pie crust. Pour egg mixture over the top (you may have a little extra if your eggs were large).
