COPYCAT KFC COLESLAW: THE REAL THING

I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. Note: This is one of the recipes I adopted in the Great 'Zaar Orphan Adoption of 2005. I hope you enjoy it.

Copycat KFC Coleslaw: the Real Thing image

Steps:

  • Mix oil, onions and sugar.
  • Add tarragon vinegar.
  • Fold in Miracle Whip.
  • Pour over grated carrots and cabbage.
  • Fold in well.
  • Refrigerate in an air-tight covered dish.
  • Best if made the night before serving.
  • The tarragon is the secret seasoning.
  • Compare with the real KFC coleslaw.
  • Enjoy.

This is a copycat recipe developed by Top Secret Recipes (topsecretrecipes.com). It's delicious & easy...my husband LOVES it and doesn't even know it's fat free! The trick is to chop the cabbage, carrot & onion into small, rice-sized bits if you want the texture of the original. I run all the veggies through the shredder of my food processor which does it in short order! *original* KFC cole slaw has 210 calories/10.5g of fat for the same size serving!!! ENJOY!

  • Finely Chop the Cabbage and put in large mixing bowl.
  • Add the other ingredients and mix well.
  • Put in a container and refrigerate covered. I use a half gallon plastic ice cream container. I find it best to sit over night or for several hours -- for the flavors to blend and allow the sugar to bring out the juices. I serve in tiny desert bowls as it is quite juicy.

It always goes quick, but I never get any compliments when I bring it as a dish to pass because they all think that I just picked it up from KFC and put it in my own bowl! I use the bags of coleslaw mix from the produce section of my store and chop it in the food processor, but you can use a 1 lb head of cabbage, and a couple of carrots instead if you wish.
