CORN FLAKE COATING MIX (FOR BAKING MEATS)
This is a mix to coat your chicken or pork chops. This recipe makes enough coating for 10 pounds of chicken (so divide it into 4 zipper bags to do 2-3 pounds of chicken each time. This will store well in the pantry for 3 months. We have used this many times!

Steps:
- 1. Put all dry ingredients into a large zipper bag. Shake it well to mix. Store in a cool dry place.
- 2. When ready to use the "shake and bake" mix, put one or two pieces of meat at a time in the zipper bag close the bag making sure to leave some air space. Shake the meat around the bag to evenly coat the meat.
- 3. Bake your meat as you would using the commerical shake and bake. (400 degree oven, do not cover or turn the chicken, cook bone in chicken for 45 minutes and boneless chicken for 20 minutes.
CORNMEAL COATING
Steps:
- In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
- In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
- Fry cod fillets in hot oil until golden brown.

- Preheat oven to 425°. Drizzle butter in a 13x9-in. baking dish. In a shallow bowl, combine the cornflakes, flour and seasoned salt. Place egg substitute in another shallow bowl. Dip chicken in egg substitute, then roll in cornflake mixture. Repeat., Arrange chicken in prepared dish, meatier side down. Bake, uncovered, for 20 minutes. Turn chicken over; bake until a thermometer reads 170°-175°, 10 to 15 minutes longer.

Steps:
- Preheat oven to 350°F.
- Line a shallow roasting pan with aluminum foil.
- Spray with cooking oil spray.
- In a large bowl, mix corn flake crumbs, salt, parmesan cheese, black and cayenne pepper and mix well.
- Lightly beat eggs in a bowl.
- Dip each drumstick in egg and roll in corn flake mixture coating well.
- Place each drumstick on the roasting pan.
- Spray a light coating of cooking spray over the drumsticks.
- Bake at 350°F for 1 hour to 1 hour & 10 minutes.

- Preheat oven to 425° F. Place a rack on top of a large rimmed baking sheet that has been lined with aluminum foil. Spray rack with cooking spray and set aside.
