CORNFLAKE FRIED ICE CREAM

- Using a 1/2-cup ice cream scoop, form two scoops of ice cream. Cover and freeze for 1 hour or until firm. In a small bowl, whisk 2 tablespoons cream and 1/8 teaspoon vanilla. In a shallow bowl, combine cornflakes and cinnamon. Dip scoops into cream mixture; roll in cornflakes. Set aside remaining cornflakes. Cover and freeze for 1 hour or until firm. , In a small bowl, whisk together the remaining cream and vanilla. Dip scoops into cream mixture; roll in remaining cereal mixture. Cover and freeze for 1 hour or until firm. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry each ice cream ball for 12-15 seconds or until golden. Drain on paper towels. Serve immediately with whipped cream.

Steps:
- Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
- In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
- In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
- Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

FRIED ICE CREAM

Steps:
- Melt the butter in a nonstick skillet over medium heat. Add the crushed cornflakes and toast until golden, about 5 minutes.
- Remove the skillet from the heat and stir in the sugar, cinnamon and salt. Allow to cool slightly.
- Scoop the ice cream into a bowl or bowls, and spoon over generous quantities of the fried cornflake crumbs. Top with some whipped cream, sprinkles and maraschino cherries.
FRIED ICE CREAM WITH CEREAL CRUST
Steps:
- Preheat the oven to 325 degrees F.
- Combine the corn flakes, coconut flakes, butter, granulated sugar and cinnamon on a large baking sheet and bake until golden and crisp, about 8 minutes.
- Use a 2-inch scoop to scoop 4 balls from each flavor of ice cream. Roll to coat the balls in the corn flake mixture on all sides and freeze for at least 30 minutes and up to overnight.
- Serve the ice cream with the Fried Sweet Dough and drizzle with chocolate sauce.
- Heat the oil in a large Dutch oven or heavy high-sided pot to 350 degrees F.
- Working in batches, fry the dough pieces until puffed and golden, about 1 minute. Remove with a slotted spoon and drain on a towel-lined plate.
- In a medium bowl, whisk together the confectioners' sugar and cocoa and sprinkle over the fried dough.

- Line shallow pan with waxed paper. Scoop ice cream into 8 (1/2-cup) scoops; place in prepared pan. Freeze 2 hours or until very firm. Meanwhile, process corn flakes, coconut and 1 tsp. cinnamon in food processor until finely chopped. Pour into shallow dish.
- Whisk egg whites in medium bowl until frothy. Add ice cream balls, 1 at a time to egg whites, then crumb mixture, turning to evenly coat each ball with each ingredient. Return to prepared pan. Freeze 4 hours.
- Heat oil to 375°F in medium saucepan. Use slotted spoon to carefully add 2 ice cream balls, 1 at a time, to hot oil; cook 15 to 20 sec. or until golden brown. Transfer to serving bowl. Repeat with remaining ice cream balls.
- Melt chocolate as directed on package. Add COOL WHIP; whisk until blended.
- Serve ice cream balls topped with chocolate mixture; sprinkle with remaining cinnamon.

DELICIOUS DEEP FRIED ICE CREAM BALLS
This is just scrumptious -- a real crowd pleaser if you want to do something fancy for a party. And oh so good...crunchy outside with frozen ice cream inside...yum! The cooking time, includes freezing time for the ice cream.

- The night before you want to make this, take the ice cream and scoop it into balls, making sure they are solid with no air pockets.
- Place them in a shallow pan, lined with wax paper, that you can put into the freezer.
- Freeze overnight or for at least 6 hours.
- Next, combine the crushed cornflakes, sugar and cinnamon in a large ziplock bag.
- Put the beaten eggs into a bowl.
- Take the ice cream balls and coat them as best you can with the cornflake mixture.
- Then dip the whole thing into the egg mixture and re-coat it with cornflakes, making sure the whole ball is well covered.
- Return to the freezer for at least 2 hours.
- When you are ready for the final step, use a good deep fryer, and heat it to a fairly high temperature.
- Remove one ice cream ball from the freezer and drop into the hot vegetable oil for about 30 seconds, or until it just begins to brown.
- Take it out of the oil and put in a bowl to serve.
- You can top it with your favourite ingredients like chocolate sauce, whipped cream or cherries--or all three!
- The shell should be cooked and crunchy, and the inside will still be frozen!
