GOAT CHEESE FONDUE ON COUNTRY-STYLE BREAD

Goat Cheese Fondue on Country-Style Bread image

Steps:

  • Using a paring knife, trim away any mold from the goat cheese and coarsely chop. Shred the Gruyere cheese. Place the wine and garlic in a small, heavy saucepan. Bring to a boil over low heat and allow to reduce by half. Add the goat cheese and let melt over low heat, stirring with a wooden spoon. Remove the garlic. Add the Gruyere and butter and stir over low heat until the cheese are melted and well blended. Remove from the heat and stir in the mustard and Marc. Preheat the broiler. A few minutes before serving, place the bread slices on a baking sheet and toast. Remove from the oven and immediately spread each slice with warm fondue. Garnish with a sprig of fresh savory or thyme and top with a grind of fresh pepper.

3 small crottins de Chavignol, or about 7 ounces Montrachet cheese
3 1/2 pounds Gruyere or Swiss cheese
1/4 cup, plus 1 tablespoon dry white wine, such as Chablis or Macon
1 clove garlic
1 1/2 tablespoons unsalted butter
1 1/2 teaspoons strong Dijon mustard
2 tablespoons Marc de Bourgogne, Grappa or Cognac
6 thick slices country-style bread
6 sprigs fresh savory or thyme
Freshly ground white pepper

Steps:

  • Combine first five ingredients, salt and freshly ground black pepper together in a mixing bowl and stir well until evenly combined. Transfer mixture into a disposable piping bag fitted with a star tip.
  • Lay out crackers or chips and pipe a round rosette of goat cheese mixture onto each one. Top rosette with a small sprig of fresh dill. Serve immediately.

1 large log fresh goat cheese, room temperature
1 Tbs. chopped fresh dill
1 Tbs. chopped fresh parsley
1 tsp. chopped fresh oregano
2 Tbs. extra virgin olive oil
salt and pepper to taste
more fresh dill for garnish
store-bought flatbread crackers or pita chips

Steps:

  • Cut the bread into large cubes and spread them onto a baking sheet. Leave them uncovered overnight to get stale.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • Put a large skillet over medium heat and add the remaining 2 tablespoons butter. When it is melted, add the mushrooms, celery and onions and season with salt and pepper. Cook until all the vegetables have softened, 6 to 8 minutes. Let cool for a few minutes.
  • In a large bowl, combine the bread, cooked vegetables and water chestnuts. Toss to combine. In a separate bowl, whisk the eggs with the broth, parsley, soy sauce and citrus juices. Fold into the bread mixture. Sprinkle with salt and pepper. If the mixture seems too dry, add more broth or a little water. Spread the mixture into the prepared baking dish. Can be covered and refrigerated overnight until you are ready to bake. Let it come to room temperature first.
  • Cover the pan with foil and put it into the oven for 20 to 25 minutes. Uncover and cook until the top is browned, about another 20 minutes. Let rest for 5 minutes before serving. Reserve 1 cup for another use if desired, such as the Round 2 Recipe Thanksgiving Pie.

1 loaf country wheat bread
3 tablespoons unsalted butter

Country Bread and Sage Dressing image

Steps:

  • Heat large saute pan over high heat. Add the sausage and cook until golden brown. Remove the sausage with a slotted spoon to a plate lined with paper towels. Add butter to the rendered fat in the pan, and then add the onions, celery and carrots and cook until soft. Add the garlic and cook for 1 minute. Remove the mixture from the heat and fold in the sage. Scrape the mixture into a large bowl and let cool slightly.
  • Preheat the oven to 425 degrees F.
  • When the vegetable mixture has cooled slightly, add the sausage to the bowl. Add the egg and bread and mix to coat. Add the chicken stock until the mixture is moist. Season with salt and pepper, to taste.
  • Butter a large baking dish and scrape the mixture into the dish. Bake for 25 to 30 minutes or until golden brown.
