COWBOY OATMEAL COOKIES
It's a great cookie, one of the kids' favorites. This doesn't call for nuts, but I sometimes add about 1/2 cup of chopped walnuts or pecans.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Sift together flour, baking powder, baking soda, and salt; set aside.
- In a medium bowl, cream margarine, oil, brown sugar, and white sugar until smooth. Beat in eggs one at a time. Gradually stir in the sifted ingredients until well blended. Mix in oats and butterscotch chips. Drop from a teaspoon onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Let set up on the cookie sheets for a few minutes before transferring to wire racks to cool completely.

COWBOY COOKIES

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Whisk together the flour, oats, coconut, pecans and baking soda in a medium bowl until combined.
- Beat the butter, brown sugar, granulated sugar and salt in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs and vanilla and beat on high speed until creamy, about 3 minutes more. Add the flour mixture and mix on low speed, scraping the sides and bottom of the bowl with a rubber spatula to combine completely. Add the cornflakes and mix on low speed until evenly distributed.
- Using a 1-ounce (2-tablespoon) scoop, arrange 12 scoops of cookie dough on the prepared baking sheet, leaving about 2 inches between each.
- Bake until the cookies are lightly golden around the edges, 14 to 16 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Let the baking sheet cool slightly, then continue baking with the remaining cookie dough.

- Place coconut and pecans on a 15x10x1-in. baking pan. Bake at 350° for 6 to 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool. , In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Combine the flour, baking soda and salt Add to creamed mixture; beat well. - Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. SIMPLE OATMEAL COOKIES OR COWBOY COOKIES
These are some cookies that I made for my SIL when she was having issues with fibre in her diet. She was encouraged to have oatmeal and so I tried to find her a "good" oatmeal cookie. This was attempt number two. This recipe is adapted from The Fannie Farmer Cookbook. I have included two versions of a great cookie. When I make the cowboy cookies, I make them BIG.

- Preheat oven to 350°.
- To make Simple Oatmeal Cookies: Mix the flour, baking soda, cinnamon and salt together in a large bowl.
- Stir in the remaining ingredients.
- Arrange by teaspoonfuls on unbuttered cookie sheets. Leave about 1 inch in between. They do spread a wee bit. Not too much though.
- Bake until the edges are brown, about 10-12 minutes.
- For Cowboy Cookies: Add in coconut and chocolate chips when you add in the rest of the ingredients (Step 3). Drop them by the FULL tablespoon on a cookie sheet. (Might have to "squish" them a bit) Bake for 14-17 minutes or until mostly brown.

- Whisk first 5 ingredients in medium bowl to blend. Using electric mixer, beat butter and both sugars in large bowl until light and fluffy. Add eggs and vanilla, beating to combine. Add dry ingredients and beat until just blended. Stir in chocolate chips and walnuts. Cover dough and chill 1 hour. (Can be made 1 day ahead. Keep chilled. Let soften slightly before continuing.)
- Arrange 2 racks in center of oven; preheat to 350°F. Butter 2 baking sheets. Form dough into balls, using 1/4 cup dough for each. Place on prepared sheets, spacing 2 inches apart. Flatten with hand to 3 1/2-inch rounds. Bake 10 minutes, then rotate sheets. Bake until cookies are golden brown around edges and firm in center, about 4 minutes longer. Cool on sheet 5 minutes. Transfer to racks to cool completely. (Can be made 1 week ahead. Store airtight at room temperature.)
COWBOY OATMEAL CHOCOLATE CHIP COOKIES
These are the best cookies I ever made. In fact they are the only ones my kids will let me make lol. I usually double the recipe cause my family gobbles them up quicker then I can make them. I suggest you give them a try, I bet your family will enjoy them as much as mine.

- Sift together flour, soda, salt & baking soda in a large bowl. Beat together shortening & sugar till creamy; (electric mixer works great) blend in vanilla & eggs till fluffy. (time to put electric mixer away and get some arm muscle) Mix in dry ingredients slowly & blend well. Stir in oats, chocolate chips & nuts. Drop by spoon onto cookied sheet sprayed with pam. Bake in preheated oven 350 degrees for about 8 minutes, Allow to cool for 1 minute then transfer to a cooling rack. They will seem a little soft at first, but they will harden up, but not so hard their crunchy, just chewy and wont fall apart.
