Steps:

APPLE-ORANGE-CRANBERRY RELISH
Steps:
- Grate the zest from the whole orange and set aside. Cut off any remaining pith from the orange. Cut the orange into chunks. Peel the apple and remove the core; cut into large pieces.
- In a food processor, combine the orange zest and chunks, apples, cranberries and celery and process until finely chopped; be careful not to process too long because the mixture will become mushy. Add the walnuts and pulse until chopped. Stir in the sugar and orange liqueur. Refrigerate until serving time, at least 2 hours and up to overnight.

CRANBERRY RELISH
This is my mother-in-law's recipe and as far as my husband and son are concerned, it is the most important part of thanksgiving dinner. It's nice to serve this in a glass bowl to show off the festive red color. Preparation time does not include overnight refrigeration.

Steps:
- Chop or grind cranberries, orange (with rind) and apple (with peel). Make sure you do this in such a way as to conserve all of the juice.
- You can use a food processor or one of the old metal food grinders that clamp to your table - mine drips horribly, but if you have kids helping, it's lots of fun for them to turn the crank and hear the cranberries pop. You could of course chop it all by hand with a knife, but you'll want to chop everything very finely.
- Place fruits and their juices in a serving dish/bowl that will hold 8-10 cups.
- Add diced celery, nuts and crushed pineapple with juice.
- Dissolve jello in recommended amount of boiling water (2 cups), and add to the fruit/nut mixture.
- Depending on how juicy your fruit is, you may not need to add any cold water to the mixture. If you think it will need it, don't add more than 1 cup.
- Depending on the tartness of your fruits, you may or may not want to add some sugar, perhaps 1/2 cup. (I just taste it before putting it in the fridge to set and add sugar if it seems too tart.).
- Refrigerate for several hours till set(overnight is good).

CRANBERRY RELISH GELATIN
This recipe was featured in an email from the Best of Spark People. The website address is www.sparkrecipes.com and there are lots of interesting recipes there. Here is what the chef has to say: Cranberry Relish is very refreshing in the summer. An excellent accompaniment to a Thanksgiving turkey, and a lovely side dish for most any pork or turkey sandwich.

Steps:
- Before I begin, I refrigerate the celery, oranges and apples; and freeze the cranberries. Having all the produce cold will help the gelatin set up quickly.
- Choose any red gelatin - raspberry, cherry, black cherry, etc. Bring 1 cup water to boil and dissolve gelatin in large bowl. Add 4-5 ice cubes and allow to cool.
- While gelatin is cooling, chop, grate or grind produce. I use a meat grinder to run all the produce through; however a grater can be used or even a food processor.
- I begin with the oranges - which produces mostly juice and will keep the apples from discoloring. Grind, chop or juice your oranges into a large bowl; next run the celery through, then apples and finally cranberries.
- If you really like cranberries use a whole bag, if it is not a real favorite, use less.
- Sprinkle the package of unflavored gelatin and sweetener (Splenda or other) over the chopped up produce and stir to dissolve.
- Optional: Add chopped nuts, pecans, walnuts, hazelnuts and stir. Pour all the produce into the cooling gelatin, stir to taste and see if it is sweet enough for your taste, or if it is too sweet grind a few more cranberries inches.
- When you are satisfied, pour into covered container and refrigerate until fully set.
