SUNNY'S NUNYA BUSINESS CRANBERRY FLUFF PIE

- In a large bowl, completely mix the cranberries, condensed milk and orange juice. Fold in the whipped topping.
- Pour the filling into the prepared graham cracker crust and refrigerate 4 hours to overnight. Serve chilled.
FRESH STRAWBERRY ICEBOX PIE
This is the best icebox pie ever! Make this during the summer when sweet strawberries are in season. This is a perfect summer pie because it is cool, refreshing, and has a yummy fresh strawberry flavor.

- For the crust: Preheat oven to 350 degrees. In a medium mixing bowl stir together graham cracker crumbs, butter, and sugar.
- Press mixture into bottom and sides of a 9 inch pie plate. Bake for 10 minutes. Cool completley before filling.
- For filling: In a medium saucepan stir together sugar, cranberry juice, 2 cups strawberries, cornstarch, and salt. Using a potato masher, gently mash strawberries.
- Bring to a boil, reduce to simmer and cook, stirring frequently until very thick, about 1 minute. Remove from heat and let cool slightly. Stir in remaining strawberries. Pour into cooled pie crust.
- Chill pie until set, at least 4 hours. Spread some whipped cream over pie leaving a 1 inch boarder around edge.

- Preheat oven to 350 degrees. In a food processor, blend graham crackers with 2 tablespoons sugar until finely ground; add butter and pulse until crumbs are moistened. One could substitute graham cracker crumbs for the vanilla wafers, and fruit cocktail for the fruit called for in this recipe. It's a great dessert and one my mother made when I was a kid, well over 25 years ago! This was one of the recipes I copied from my mom's collection when I left home for the first time! This pie contains raw eggs. We recommend that pregnant women, children, the elderly, and the infirm do not consume raw eggs.

My mother in law gave me this recipe several years ago after serving at our Thanksgiving dinner party, and I've been making this traditionally since. With a festive presentation of red cranberry slush afloat of sparkling ginger ale, this is an ideal drink for any festive holiday occasion.

- Sprinkle the gelatin over 2 tablespoons cold water and set aside.
- Combine the cranberries and 2 cups water in a saucepan over medium-high heat, bring to a boil and cook until cranberries burst. Remove from heat and stir in sugar until dissolved; mix the softened gelatin into the hot cranberry mixture. Pour the cranberries into a shallow freezer-proof container and chill until cold.
- When cooled, mix in 2 cups ginger ale and place the mixture into the freezer. Freeze until slushy, about 4 hours. Stir twice during the freezing process to break up the ice crystals.
- To serve, fill clear glasses 3/4 full with chilled ginger ale, and spoon some of the cranberry ice overtop. Serve immediately.
