CRANBERRY TURKEY SANDWICH ON SOURDOUGH NON-DAIRY

Dairy-free and adapted from my favorite sandwich that I used to order from a sandwich restaurant a long, long time ago. I know some of the ingredients sound like an odd mix, but in my opinion it's an extremely tasty combination. This particular recipe serves one. As always, amounts are approximate and you may change the ingredient types or amounts to suit your taste. Enjoy!

Cranberry Turkey Sandwich on Sourdough Non-Dairy image

Steps:

  • Spread desired amount of Tofutti on each slice of sourdough bread.
  • Place turkey slices on one slice of bread.
  • Spread desired amount of jellied cranberry sauce over the turkey.
  • Layer on top a few slices of red onion and dill pickle slices, and place the other slice of bread on top.
  • Cut sandwich in half, if desired.
  • (You can use regular, fat-free, or low-fat cream cheese instead of the Tofutti if you don't need to worry about dairy.).

2 slices sourdough bread
1 -2 tablespoon tofutti better-than-cream-cheese (or other cream cheese substitute, I recommend Tofutti Better Than Cream Cheese)
2 teaspoons jellied cranberry sauce
4 slices oven-roasted deli turkey (oven-roasted turkey from your grocer's deli counter)
4 -6 slices red onions
2 -4 slices dill pickles

Turkey Sandwiches with Cranberry Sauce image

Steps:

  • Preheat the oven broiler.
  • Cut the bread into four pieces, and split lengthwise almost all the way through for four sandwiches. Spread margarine on the inside of each piece. Place on a baking sheet, cut side up.
  • Toast bread under preheated broiler until lightly browned, 1 to 2 minutes. Remove pan from the oven.
  • Layer 4 pieces of bread with 2 slices each of the turkey, cheese, and bacon. Remove the remaining 4 slices of bread from the baking sheet and reserve for sandwich tops. Cool bread slightly, and spread mayonnaise onto the cut side of each of the 4 top slices.
  • Place the bread with turkey and cheese under the broiler just until the cheese melts, about 1 minute. Remove from the broiler, and spread 1 tablespoon cranberry sauce over each sandwich. Layer with the tomatoes and lettuce. Place a top bread slice over each half, and serve.

Cheddar, Turkey and Cranberry on Sourdough image

Steps:

  • Spread 1 1/2 tablespoons of cranberry sauce on each of 4 slices of bread. Add 2 ounces of cheddar onto each piece, followed by two ounces of roasted turkey.
  • Cover each prepared bread slice and evenly butter the top of each sandwich. Place each sandwich butter side down in a frying pan over medium heat. While the first side is grilling, butter the second side of bread. Cook until golden and crusty, about 3-4 minutes. Carefully turn and cook until second side is golden, about 2-3 minutes more.

8 slices sourdough bread
6 tablespoons cranberry sauce
8 ounces cheddar cheese (2 cups grated)
8 ounces roasted turkey breast
1 tablespoon softened, lightly-salted butter

Turkey Cranberry Sandwich image

Steps:

  • Chop red onion very fine and mix with whole cranberry sauce.
  • Smear mayonnaise on one side of sliced bread. Smear cranberry-onion mixture on the other slice of bread.
  • Layer turkey slices, bacon and provolone on one side of bread and top with other slice of bread.
  • Using a skillet or grill pan, grill sandwich with butter and remove from heat when cheese has melted. Cut sandwich into 2 halves and serve.

Turkey Cranberry Sandwich image

Steps:

  • 1. Lightly toast both slices of bread. Spread cream cheese on both halves while bread is still hot, so the cream cheese melts justly slightly. Add mayonnaise, if you wish.
  • 2. Spread cranberry sauce on both slices of toasted bread with cranberry sauce (or cranberry relish).
  • 3. Top one toasted slice with cooked turkey meat and season with salt and pepper. Then top with Romaine lettuce leaf. Place the other slice of bread over the Romaine lettuce. Cut the sandwich in half diagonally.
  • 4. Serve with re-heated leftover Thanksgiving stuffing or re-heated mashed potatoes and gravy.

2 slice bread
2 Tbsp cream cheese, softened
2 Tbsp cranberry sauce (I use my homemade cranberry relish)
1 Tbsp low-fat mayonnaise (optional--I usually omit it, but most of my family prefers it)
2 slice cooked turkey (great use of your leftover thanksgiving turkey)

1 romaine lettuce leaf
