- Heat oven to 400 degrees. Place garlic cloves in a small baking dish. Drizzle with olive oil, and sprinkle with a pinch of salt and black pepper. Cover the dish tightly with aluminum foil, and bake until cloves are soft and fragrant, about 30 minutes. Set aside to cool.
- Place butter in the bowl of an electric mixer fitted with the paddle attachment; add garlic and remaining salt and pepper. Beat until well combined. Scrape butter onto a sheet of parchment paper or plastic wrap. Shape into a log; freeze until firm, about 20 minutes. It can be stored in the freezer for up to 2 weeks.

- Preheat the oven to 400 degrees F (200 degrees C).
- Clean mushrooms with a damp paper towel and gently remove and discard stems.
- Drizzle oil into a large cast iron skillet to evenly coat. Place mushrooms into the skillet, cap-side down. Carefully sprinkle garlic into the mushroom cavities, taking care not to sprinkle directly into the skillet. Drizzle mushrooms with melted butter, then season with salt and pepper.

- Preheat the oven to 375 degrees F.
- Place the garlic cloves in a small ovenproof dish. Drizzle with 2 tablespoons of the olive oil and sprinkle with salt and pepper. Cover with foil and roast in the oven until the garlic is golden and soft, about 45 minutes. Set aside to cool completely.
- To a large bowl, add the softened butter, parsley, chives, thyme, red pepper and the roasted garlic. Using a spatula, mix everything together until well combined. Lay out a large piece of plastic wrap and add the butter in a long strip down the middle. Pull one side of the plastic wrap over the butter and gently form it into a log. Tightly twist the ends like a candy wrapper, until everything is nice and tight. Transfer to the fridge for a couple hours to harden. (Butter can be made ahead; it will keep for 1 week in the fridge.)
- When you are ready to cook the steaks, preheat the oven to 450 degrees F.
- Sprinkle the steaks liberally with salt and pepper. Add the remaining tablespoon each olive oil and butter to an ovenproof skillet and place over a medium-high heat. When the oil is hot and the butter is melted, place the steaks in the skillet and cook until well browned, about 1 minute per side.
- Place the skillet in the oven and cook the steaks for 4 to 5 minutes for medium-rare. Remove from the oven and top each steak with a thick slice of the garlic butter. Loosely cover with foil and allow to rest for 8 to 10 minutes.

ROASTED GARLIC THYME BUTTER
Steps:
- Put the garlic cloves in a saucepan with just enough olive oil to cover them. Place over low heat and simmer until the cloves are soft and golden, 30-40 minutes. With a slotted spoon, scoop the garlic into a bowl, then mash to a puree. Immediately strain the oil through a coffee filter and reserve.
- Process the butter in a food processor until smooth and creamy. Add 1/4-cup of the garlic puree (save any extra for spreading on bread), 1-1/2 Tbs. of the reserved garlic oil, the thyme, and a pinch of salt. Process until well blended. Taste and add more salt if needed. Refrigerate until firm enough to shape into a log.
- Put an 18-inch sheet of aluminum foil on your work surface. Spoon the butter down the center of the foil into a log about 1-1/2 inches in diameter. Enclose in foil and twist the ends to make a sealed log, like a Tootsie Roll. Refrigerate for up to 1 week, or freeze for up to 6 months.

- Clean dirt and roots from garlic, place garlic in the center of a 10x10-inch sheet of aluminum foil.
- Pour olive oil over garlic, wrap with foil and roast in oven for 60 minutes.
- While garlic is roasting, cut butter into chunks and place in a medium bowl--this will expedite the softening process.
- Once butter is softened, add sugar and beat with a hand mixer until fluffy.

Store in the refrigerator and use within a month. Although, I found that it can be kept in the fridge up to 3 months if stored properly. I make a batch and keep it in the fridge. It's great for instant garlic bread and awesome on grilled vegetables or homemade potato and sweet potato fries. This is one of my favourite on-hand ingredients for a quick and easy dinner. It shortens preparation time considerably during cooking and it keeps well once refrigerated. I personally feel that the flavours improve with time.

- Chop the garlic finely. Sprinkle 1 tablespoon salt over the garlic and continue to chop it, occasionally smashing and smearing the garlic with the flat side of the knife, until the garlic becomes paste-like. - Heat a large cast-iron skillet over medium-high. Sprinkle steak all over with 1 1/2 teaspoons of the salt and 1/2 teaspoon of the pepper. Add oil to skillet, and heat until shimmering. Add half of the steak pieces to skillet, keeping space between each piece. Cook, undisturbed, until browned and crispy on bottoms, about 1 minute. Flip steak pieces, and continue cooking until browned on other side, about 1 minute. Flip pieces again, and cook, turning occasionally, until most sides are browned and crispy and steak is almost medium-rare, 1 to 2 minutes. Transfer steak to a large bowl. Repeat cooking process with remaining steak pieces, transferring cooked steak to bowl with first batch; set aside. Do not wipe skillet clean.
- Reduce heat under skillet to medium; add garlic, and cook, stirring constantly, until golden brown, about 30 seconds. Add vermouth, and scrape up browned bits from bottom of skillet. Cook, stirring occasionally, until liquid is reduced to about 3 tablespoons, about 1 minute. Remove from heat; add butter, and stir until melted and creamy. Add Worcestershire sauce and remaining 1/2 teaspoon each salt and pepper. Pour mixture over steak pieces in bowl, and toss to coat. Transfer steak with butter sauce to a platter, and sprinkle with parsley. Serve immediately.
