CREOLE CRAWFISH AND SHRIMP BOIL

Steps:
- Combine the potatoes, Creole seasoning, thyme, bay leaves, garlic, lemons, boil seasonings bag and onion with 6 quarts cold water in a 14-quart or larger pot with a colander insert. Cover and bring to a boil; reduce to a simmer and cook 10 minutes.
- Add the andouille and corn to the pot. Cover and simmer an additional 15 minutes. Add the crawfish, cover again and cook 10 minutes. Add the shrimp and stir to combine. Cover and cook for 4 to 5 minutes more. Carefully strain the seafood, sausage and vegetables and serve on a large table covered with newspaper. Season with salt or additional Creole seasoning.
MEXICAN SHRIMP COCKTAIL
I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!

- Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.

CRAWFISH THERMIDOR
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease 4 small to medium sized ramekins.
- In a skillet, melt the butter and add mushrooms and white wine; simmer for about 8 minutes. Add the crawfish tails and simmer for another 5 minutes.
- Gradually blend in flour, salt, and red pepper flakes. Slowly drizzle in the milk, stirring constantly and cook until mixture thickens.
- Pour mixture into the prepared ramekins. Sprinkle the top of each with a pinch of paprika.
- Bake in preheated oven for 10 to 15 minutes or until heated through.

BROILED CRAWFISH WITH HORSERADISH COCKTAIL SAUCE

- For sauce:
- Whisk first 4 ingredients and 3 teaspoons horseradish in medium bowl to blend. Season to taste with freshly ground black pepper and more horseradish, if desired. Transfer to small bowl. DO AHEAD: Sauce can be made 1 day ahead. Cover and chill.
- For crawfish;
- Combine first 7 ingredients in 10-to 12-quart large pot. Add 4 quarts water and 2 tablespoons salt. Bring to boil over high heat, stirring until salt dissolves. Boil 5 minutes. Add crawfish and boil 5 minutes. Remove from heat. Add ice cubes to pot to stop cooking. Let crawfish sit in cooking liquid 15 minutes.
- Using slotted spoon, transfer all crawfish to large bowl. Reserve 10 whole crawfish for garnish. Working with remaining crawfish 1 at a time, hold head and body with 1 hand and twist off tail portion with opposite hand. Discard head portion. Peel shell off tail and clean tail. Place tail in medium bowl. DO AHEAD: Can be made 8 hours ahead. Cover and chill tails and reserved 10 crawfish.
- Divide cleaned crawfish evenly among 10 dishes. Garnish with whole crawfish.
- Serve crawfish with cocktail sauce and lemon wedges.

CAJUN CRAWFISH AND SHRIMP ÉTOUFFéE
An authentic Louisiana recipe with a rich and spicy fresh tomato-based roux with fresh garlic, bell peppers, celery and onions mixed with crawfish and shrimp. A little time consuming but well worth it! Serve over steamed rice with hushpuppies and/or crackers on the side.

- Heat the oil in a heavy skillet over medium heat. Gradually stir in flour, and stir constantly until the mixture turns 'peanut butter' brown or darker, at least 15 or 20 minutes. I use a large fork with the flat side to the bottom of the pan in a side to side motion. This is your base sauce or 'roux'. It is very important to stir this constantly. If by chance the roux burns, discard and start over.
- Once the roux is browned, add the onions, garlic, celery and bell pepper to the skillet, and saute for about 5 minutes to soften. Stir in the chopped tomatoes and fish stock, and season with the seafood seasoning. Reduce heat to low, and simmer for about 20 minutes, stirring occasionally.
- Season the sauce with hot pepper sauce and cayenne pepper (if using), and add the crawfish and shrimp. Cook for about 10 minutes, or until the shrimp are opaque.

- Saute' the onions, celery, and bell peppers in the margarine until the onions are clear.
- Stir in flour.
- COVER.
- Cook on low heat for 15 minutes, stirring often.
- Add parsley and crawfish or shrimp and cook another 15 minutes.
- Add Half& Half, cheese, garlic and Jalapeno pappers.
- Add salt and pepper to taste.
- Cook 15 minutes.
- Meanwhile, cook fetuccini noodles according to package directions, but do not add salt to water.
- Combine cooked noodles with other ingredients and bake in 4 quart dish at 350 degrees for 15 minutes.

- In med. sauce pot sauté onions, bell pepper, garlic, celery and butter.
- Add shrimp and crawfish, cover and cook over med.
- heat until shrimp and crawfish are cooked down and pink.
- Add tomato paste and sauce, cook about 30-40 minute over low-med heat.
- Add parsley and green onions.
- Cook another 5 minute.
- serve over hot rice.
