This is from St. Phillip's Favorite Fixings Plymouth Meeting, PA. A delicious cookie that starts with a cake mix, but you can't tell!

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl beat cream cheese, butter, egg yolk and vanilla extract.
  • Blend in dry cake mix 1/3 at a time.
  • Blend the last 1/3 in by hand.
  • Mix in raisins, coconut and walnuts.
  • Drop by level tablespoons onto greased cookie sheets.
  • Bake for 15 minutes or until lightly brown.

Lemon Gem Muffins with Cream Cheese image

Steps:

  • In a bowl whisk together the flour, the baking soda, the salt, and the sugar. In another bowl whisk together the eggs, the lemon juice, the butter, and the vanilla, add the egg mixture to the flour mixture, and stir the batter until it is just combined. Divide the batter among 24 buttered 1/8-cup muffin tins and bake the muffins in the upper third of a preheated 400°F. oven for 10 to 12 minutes, or until a tester comes out clean. Turn the muffins out onto a rack, let them cool, and serve them with the cream cheese and the papaya in cinnamon syrup.

1 stick (1/2 cup) unsalted butter, melted and cooled

  • Pre-heat oven to 350
  • In Large bowl of an electric mixer, 1) Beat Butter, Cream Cheese, and sugar until creamy 2) Beat in Vanilla and Lemon Peel 3) Gradually add flour blending thoroughly 4) Drop by rounded teaspoonfuls onto ungreased baking sheet, spacing cookies about 2 inches apart 5) Bake in oven for about 12 minutes or until edges are golden brown.
  • 6) Transfer to racks and let cool. 7) Store in air tight container.
