SOUR CREAM CUCUMBERS
We have a tradition at our house to serve this creamy cucumber salad with the other Hungarian specialties my mom learned to make from the women at church. It's especially good during the summer when the cucumbers are freshly picked from the garden. -Pamela Eaton, Monclova, Ohio

- In a large bowl, whisk sour cream, vinegar, sugar and pepper until blended. Add cucumbers and onion; toss to coat. Refrigerate, covered, at least 4 hours. Serve with a slotted spoon.

CREAMY CUCUMBER SALAD
Fresh dill and sour cream turn the summer staple into something cool, creamy and refreshing. Try this classic Midwestern salad with black bread and smoked salmon, or as a simple side for chicken or fish.

Steps:
- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.
CREAMED CUCUMBERS AND ONIONS
I always loved cucumbers and onions growing up and made them for my family. My daughter didn't like it as well, complaining it's too sour so I used a recipe from my aunt from the south that would sweeten it up. I can say I now make this version most of the time, it's so fresh and delicious in the summer when we use our own...

- 1. Mix mayo, sour cream, vinegar, sugar, garlic, onion, & dill weed in a medium bowl.
- 2. Peel and slice cucumbers and onions and put in a strainer. Pour salt over the cucumbers and mix until well coated. Allow to sit for 1/2 an hour or so. Rinse salt off and pat cucumbers dry with a paper towel. This process brings the moisture out of the cucumbers so the recipe stays creamy instead of liquidy.
- 3. Stir cucumbers into mayo mixture and refrigerate for at least 2 hours. It will even taste better the next day just as the old fashioned cucumbers and onions would!
CREAMED CUCUMBERS
We moved here about 3 years ago and we love our home in the country. We plant a garden each year, making sure there's always plenty of cucumbers. I must admit I never really cared for cukes until my mother-in-law prepared them this way. Now they're one of my favorite vegetables.

CREAMED CUCUMBER DELIGHT
This is such a yummy blend of cucumbers and onions in a sweet creamy sauce. When I was young my Grandma would make this for me all the time. That was over 30 years ago. It is a wonderful go to recipe for those hot summer days when you don't want to cook. I prefer using Vadalia onions, but any yellow onion will do. I try not to use too big of cucumber (diameter) because there are too many seeds. I have even substituted splenda for the sugar and light miracle whip with good results. (However, the juice doesn't flavor as long with the splenda). Finally, the cook time is the refrigerator marinate time. I hope you enjoy.

- Peel and slice cucumber and onions thinly. The best results are even slices. I use a mandolin for this step.
- Place sliced cucumber and onions in a medium bowl that has a lid.
- In a small bowl mix together the Miracle Whip, sugar, vinegar. Add salt and pepper if using. Pour over top of the cucumbers/onions. Place the lid on the bowl and give it a shake or two.
- Marinate 6 hours or overnight in the refrigerator.
- Do not add more liquid. Juice will keep for a long time. Just keep adding onions and cucumber as they get low until you no longer get the wonderful flavor on the cucumbers. Then it is time for a new batch.
CUCUMBERS IN CREAM
"WE HAD an enormous vegetable garden, so we enjoyed freshly picked cucumbers in summer. After the cucumber were sliced and soaked awhile in salt water. Mother added thick cream, which she carefully scooped from the top of some fresh milk."
