CREAMY CHOCOLATE FUDGE
I clipped this recipe from a December 1983 issue of The Charlotte (NC) Observer, which was running a contest to see who made the best fudge. This recipe won in the "Plain Chocolate Fudge" category (no additives such as nuts). I made this for presents at the holidays and now my grown kids are making it for gifts themselves. I buy disposable aluminum pans approx 5x8-inch so I can just wrap them up and give them as gifts. This recipe makes three pans-full.... or two 8x8-inch pans of fudge.

Steps:
- Butter two 8x8-inch or three 5x8-inch pans.
- In a large heavy pot (I use a dutch oven size pot), mix together sugar, milk, vanilla, and butter; stir to mix.
- Bring to a boil, stirring constantly.
- Then let boil for 2 minutes, not stirring.
- NOTE: You need to move quickly during the next couple of steps so have the marshmallows and chocolate squares cut up and cut open the bags of chocolate chips.
- Turn off heat but leave pot on the burner.
- Add marshmallows, quickly stirring until melted.
- Add each chocolate separately in the order listed in the recipe, quickly stirring until melted.
- Pour into prepared pans.
- Let cool.
- Fudge tastes better each day --- if it lasts!
AUNT TEEN'S CREAMY CHOCOLATE FUDGE
This was my aunt's recipe for fudge, passed down through the family. It's better than any fudge I've ever had at the Jersey shore, and easy enough to whip up in 15 minutes or so.

CREAMY FANTASY FUDGE
This fantasy fudge recipe uses half as much sugar and less butter than the "standard" fantasy fudge recipe. The result is very creamy fudge with no sugar granules! I have made this for 20+ years and always get raving complements when I take it to church or work. Janet Rogers gave me the recipe. Be careful with the quantities and be sure to boil the candy long enough. Unfortunately I do not have a temperature guideline, but it seems to me the bubbles in the boil get larger when it is ready. The fudge tends to be somewhat gooey when it is first unmolded, but it firms/dries nicely after a day or so. Note: I always make the "double" recipe shown below. The recipe can be halved; use one 7 oz. jar of marshmallow cream and 8X8 pan.

- Grease a 13X9 metal pan with butter and set aside.
- Add the first three ingredients to a large (4 qt.) sauce pan.
- Bring to boil over medium heat, stirring continuously with a wooden spoon.
- Boil, stirring continuously, over medium heat for five minutes.
- Remove from heat and stir in the next three ingredients.
- Stir in the marshmallow cream until well mixed.
- Pour/spread into pan and chill.
- To remove, dip pan in hot water for about 15 seconds, invert over a cutting board and shake and twist the pan until the fudge releases.
- If you have time and space; put the fudge and cutting board back in the refrigerator for a while to let it re-set. The fudge tends to be sticky when it is fresh.
- To get 96 pieces, cut the 13X9 rectangle in quarters, cut each quarter in half (across the short side), and each of the 8 small rectangles 3X4.

- Line a 15x10x1-in. pan with foil; grease foil with 1 teaspoon butter. Place chocolate chips, remaining butter and marshmallow creme in bowl of a stand mixer., In a large heavy saucepan, combine sugar and milk. Bring to a rapid boil over medium heat, stirring constantly. Cook and stir 8 minutes. ELEGANT ITALIAN CREAM FUDGE
When the children were small I always tried two or three different recipes around the holidays and the real good ones would be added to the family traditions. This was one of the best candy recipes I found. My grown children still want me to make 2 batches so they can have some to take home at Christmas. I usually make this right before or right after Thanksgiving because if you can let it set for about a month it is creamier. Be prepared to stand over it while cooking. The mixture is thick and it sticks to the pan unless your spoon keeps it moving. And when you beat the lukewarm candy, let your electric mixer do the work. - Combine sugar, evaporated milk, corn syrup and salt in 4 qt heavy saucepan.
- Cook over medium to low heat, stirring constantly, until mixture reaches the soft ball stage (238 degrees).
- Remove from heat and add butter without stirring.
- Cool to lukewarm (110 degrees).
- Add vanilla.
- Beat with electric mixer at slow speed until candy thickens and is very creamy.
- Stir in nuts quickly.
- Pour into two buttered 8 1/2"x4 1/2"x2 1/2" loaf pans, cool until firm.
- Remove candy from pans and wrap each loaf in foil or plastic wrap.
- Store in cold place.

CREAMY RICH CHOCOLATE FUDGE
This is an extremely rich and creamy fudge recipe, it will definitely satisfy a sweet tooth craving. My husband and co-workers are always asking me to make this. If you have never made fudge, it may take a few times to get it right. Do not heat past 238 degrees or the fudge becomes dry. Also, if it is cooled too much before you beat it, it will harden very quickly. Beat the fudge until it just starts to lose its gloss.

- In a small saucepan heat chocolate and milk on low, stirring until melted.
- Add sugar, syrup and salt and cook to 234- 236 degrees F.
- Add butter and pour off into a bowl and then add vanilla.
- Allow to cool to approx.
- 120 to 125 degrees.
- After it has cooled, beat until it starts to lighten, lose its gloss and thicken.
- Pour into a greased 8 by 8 inch dish and let cool completely.
- Cut into cubes.

CREAMY VANILLA FUDGE

- Tip the sugar, butter, milk and evaporated milk into a heavy based pan and heat gently, stirring frequently, until the sugar has dissolved.
- Bring to the boil and as the temperature rises, stir the fudge occasionally (be careful as the mixture is very hot) so that the sugar doesn't stick and burn.
- Continue boiling until a temperature of 116C is reached on a sugar thermometer. If you don't have one of these, you can test if the fudge is at this temperature by spooning a small amount of the syrup into some iced water, it should form a soft ball.
- Remove the pan from the heat and stir in the vanilla extract.
- Pour into an 18cm shallow square tin brushed with a little vegetable oil, and leave for 10-15 mins or until almost set. It will set quicker in the fridge.
- Mark the fudge into 36 squares with a sharp knife and leave to cool completely.
