Steps:
- Cook pasta according to package directions for al dente., Meanwhile, in a Dutch oven, cook sausage over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles. Stir in tomatoes, garlic, fennel seed and pepper flakes; cook 1 minute longer., Add wine. Bring to a boil; cook until liquid is almost evaporated, 1-2 minutes. Stir in cream; cook 1 minute longer. Add spinach; cook and stir just until spinach is wilted., Drain pasta; add to sausage mixture. Stir in 1/2 cup cheese. Sprinkle with crushed croutons and remaining cheese.

CREAMY KALE AND PASTA WITH SWEET SAUSAGE
I came up with this pasta recipe to incorporate kale into our diet. My husband had thirds the first night I made it and he is not a fan of kale (or anything green). Even the kids loved it! Enjoy.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook gemelli at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add sausage and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes. Add tomato, onion, and garlic; saute for 3 minutes. Pour in chicken broth and scrape the bottom of the pan to deglaze browned bits. Add kale and cook, tossing occasionally, until wilted and tender, about 5 minutes. Season with salt and pepper.
- While kale is cooking, reserve 1/2 cup pasta water, and drain pasta. Melt butter in a medium saucepan over medium heat. Add flour and cook, stirring constantly with a whisk, for 1 minute. Pour in milk slowly while whisking vigorously to smooth lumps. Season with salt and pepper and continue to cook until mixture begins to bubble and thicken, 7 to 10 minutes. Add reserved pasta water to reach desired consistency as needed. Remove sauce from heat.
- Pour sauce into sausage mixture, add drained pasta, and toss to evenly coat. Serve warm topped with Parmesan cheese.

CREAMY KALE AND SAUSAGE PENNE WITH SUNDRIED TOMATOES

- Place cooked pasta into a large serving bowl. Reserve 1/2 cup of pasta water for the sauce.
- Oil a large skilled and heat over medium high heat for 2 minutes. Add sausage, use wooden spoon to break up the pieces and cook thoroughly until no longer pink, about 5 minutes.
- Add sundried tomatoes and garlic; saute 1 minute longer.
- Remove skillet from heat and add Pinot Grigio, scraping any browned bits from the bottom. Return skillet to heat and add chicken broth and kale, continuing to cook and toss until kale is wilted and tender, about 5 minutes.
- Season with salt and pepper to taste.
- Combine the sausage and kale mixture with the cooked pasta in a large serving bowl and cover to keep warm.
- Begin making the sauce by adding flour and butter to same skillet and pull together with a whisk, making a roux.
- Slowly add in whole milk and whisk vigorously to smooth lumps.
- Add heavy whipping cream and parmesan cheese to make sauce. Add reserved pasta water to smooth out the sauce, if needed.
- Pour the sauce over the cooked pasta, sausage, and kale mixture and toss with tongs to combine.
PENNE WITH SAUSAGE IN CREAMY TOMATO SAUCE
This is an easy recipe with tons of flavor, rigatoni pasta can be used in place of penne. If you are using spicy sausages then omit the chili flakes. Try to use only high-quality canned tomato products, it will really make a huge difference in your sauce, no no-name brands for this! With this sauce (and any tomato-based sauce) it needs some time to cook, the longer you cook the sauce uncovered the thicker and richer it will be, you can even start it in the morning turn it off then continue cooking later, cook for even 2 hours!

Steps:
- In a large skillet heat oil over medium heat.
- Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 minutes) using a slotted spoon remove to a bowl and leave some fat in the skillet.
- Add in the onion, chili flakes, basil and oregano; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
- Add in tomato paste and stir 1 minute.
- Add in the wine and simmer for 6-8 minutes over medium-low heat, or until it almost evaporates.
- Add in the cooked sausage meat along with the crushed and chopped drained tomatoes.
- Add in 1 tablespoon salt.
- Simmer uncovered for about 1-1/2 hours over low heat, stirring with a wooden spoon occasionally.
- Season with more salt if desired and black pepper.
- Stir in the cream and heat through over low heat.
- Just before the sauce if finished cooking, cook the pasta in boiling salted water until just al dente (do not rinse the pasta with water).
- Serve the sauce with cooked pasta, sprinkle with grated parmesan cheese on top.
