This is my favorite dressing now! It was recommended to me by my boss, and it's so fresh and yummy and so easy to make! I hope you like it too! Note: The original recipe calls for 1 extra-large egg yolk, but I don't care for raw eggs, so I leave it out, which the recipe says is fine to do. I just added it as an option.

CREAMY LOVAGE AND MUSTARD SALAD DRESSING
I grow this wonderful old fashioned herb in my herb garden, it's one of my favourites - I love it's warm celery-lemon flavour. Lovage was used extensively during the Middle ages - right up to Victorian times - then it somehow fell out of fashion, which is such a shame as it is such a versatile and interesting herb. This is a wonderful creamy salad dressing, which perks up any mundane leaves - I like to serve it with Mache or Lamb's Lettuce and Tomatoes for a simple and yet elegant starter. It also works well with cooked spring vegetables such as peas, baby carrots, new potatoes and young broad beans.

- For the dressing:
- In a medium saucepan, bring a few inches of water to a boil. Using a slotted spoon, gently lower in the eggs and cook for 9 minutes (or 8 minutes if you like the yolk a little softer). While the eggs cook, set up a bowl of ice water in the sink; transfer the just boiled eggs to the ice bath.

Gently but thoroughly toss the salad with your hands to coat the leaves well. Taste a leaf and add more dressing, lemon, salt, or pepper as needed. Serve immediately.

This is a super-simple salad dressing with cream and white balsamic vinegar. It tastes great with all sorts of leafy greens. I use sunflower oil or any other plain oil. Olive oil has too strong a taste.
