Spaghetti Squash with Parmesan Cheese image

Steps:

  • Preheat the oven to 350 degrees F. Use a paring knife to prick squash all over. Place in a baking dish and bake 1 hour or until soft. Cut squash in half. Scoop out and discard seeds. Using a fork, scrape flesh in strings into a serving bowl. Toss with Parmesan and butter and season to taste with salt and pepper.

1 medium spaghetti squash
1/2 cup grated Parmesan cheese
1/2 stick butter

Spaghetti Squash Au Gratin image

Steps:

  • Place spaghetti squash in a covered dish and add 1/4 inch of water. Microwave for 10 to 12 minutes. Scrape insides of squash with a fork and transfer to a small bowl.
  • Heat margarine in a medium skillet over medium heat while spaghetti squash is cooking and cook onion, red pepper flakes, garlic powder, salt, and pepper until the onion is browned, 5 to 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish with nonstick cooking spray.
  • Mix spaghetti squash, onion mixture, sour cream, and 1/2 of the Cheddar cheese together. Transfer to the prepared baking dish and top with remaining Cheddar cheese.
  • Bake in the preheated oven for 20 to 25 minutes. Turn on broiler for the last 2 to 3 minutes and broil until gratin is golden brown on top.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Coat a baking sheet with cooking spray, and place squash halves cut-side down on the sheet. Bake until squash is tender but still crunchy, about 40 minutes. Set aside to cool.
  • Once cool enough to handle, shred squash flesh from rind using a fork. Set aside.
  • Melt butter in a skillet over medium heat. Cook onion and garlic in butter until soft. Add squash to the skillet, and cook until hot. Season with salt and pepper.

I know there are a lot of other spaghetti squash recipes posted here on Zaar, but I didn't see one quite like this. This recipe produces a rich, creamy, indulgent, savory, and wonderful casserole! You could serve it as a side dish, with fish, pork, or chicken. Or, serve with a side salad, and you've got a satisfyingly light meal. It's healthy, no matter how you slice it, and perfect for a low-carb diet.

Creamy Baked Spaghetti Squash Parmesan (Low-Carb) image

Steps:

  • Preheat oven to 375 degrees.
  • Cut spaghetti squash in half, lengthwise, and remove seeds. Place on foil lined baking sheet, cut side down, and bake for 35 minutes.
  • Remove from oven, and allow to cool.
  • Meanwhile, combine half and half, 1/2 cup parmesan cheese, and seasonings in a small bowl. Whisk to combine. Set aside.
  • When spaghetti squash is cool enough to handle, use two forks to pull the squash strands from the skin. Place in a 2 quart casserole dish. Discard skins.
  • Pour the cream mixture over the squash, and stir to combine.
  • Top with 1/2 cup parmesan cheese.
  • Place in oven, and bake 20-30 minutes. If the cheese does not brown and bubble, broil for 5-10 minutes.
  • Serve hot, and enjoy!

This is an extreme veggie dish, one of the best squash recipes I have made so far, there is tons of flavor in this dish.. if you don't have all the veggies that are called for in this recipe, just leave them out, but please don't leave out the zucchini, spaghetti squash, cherry tomatoes, mushrooms, onions and garlic! This complete recipe is made on top of the stove, except for baking the squash. Bake the spaghetti squash well in advance before making this dish, after that is is mostly chopping. This is well worth the effort to make it is delicious! Although the recipe does not call for this, I sprinkled some mozzeralla cheese on top just before serving instead of the Parmesan, but that of coarse is up to you.

Steps:

  • In a large frypan, melt butter.
  • Saute onions, mushrooms and garlic until soft (do not brown).
  • Add cauliflower, peas and sliced zucchini; stir to combine.
  • Add in cream, chicken stock, salt and pepper; bring to a boil, and simmer until the juice evaporates a bit (about 3 minutes).
  • Add in sliced red bell pepper, green onions, cherry tomatoes and Parmesan cheese; combine well and heat thoroughly.
  • Using a fork, scrape the strands of squash into a large shallow baking dish or a large serving plate.
  • Top immediately with the veggie mixture.
  • Sprinkle with more grated Parmesan cheese if desired.
