DELICIOUS AND EASY CORN ON THE COB
I learned this from a shopper in Stockbridge, Massachusetts when I was young. I have used this for 40 years and it has never failed to produce the most wonderful corn on the cob.

- Bring a large pot of water to a boil. Stir sugar into water to dissolve; add corn, cover pot, and turn heat off, leaving pot on hot burner.
- Steep corn in hot water until tender, about 25 minutes.

CREAMED CORN ON THE COB

Steps:
- Preheat oven to 400 degrees F.
- Place a metal steamer basket in bottom of a large pot and add water to the bottom of the basket.
- Stand corn in and bring to a boil.
- Cover, then steam for about 6 minutes.
- Transfer corn to a roasting pan and let cool.
- In a small bowl, beat the butter and cream together with a fork.
- Stir in salt and pepper.
- Brush half the mixture on the corn and bake for 4 to 5 minutes.
- You may also grill the corn over medium heat.
- Remove corn from oven or grill and brush with remaining butter mixture.
SCALLION CREAM CHEESE CORN ON THE COB
Steps:
- Heat a grill or grill pan to medium-high heat. Reserve 2 or 3 of the scallions for serving.
- Drizzle the corn and remaining scallions with the olive oil, season with a big pinch of salt and 5 to 6 turns of pepper and toss around so everything is coated. Place the scallions directly on the grill grates and cook, turning a few times, until charred, 4 to 5 minutes. Set aside.
- Grill the corn, turning every couple of minutes, until nice and charred, 10 to 12 minutes depending on the grill (just keep cooking until they are the level of charred you prefer; be careful, they will pop). Remove from the grill and keep warm.
- Thinly slice the reserved scallions and set aside.
- Combine the cream cheese, sour cream and lemon juice in a mixing bowl and whisk until smooth.
- When the grilled scallions are cool enough to handle, chop them finely and add them to the cream cheese mixture with the everything bagel seasoning. Stir to combine, taste and adjust the seasoning if necessary. (You will probably need to add salt if your everything seasoning does not have salt.)
- Schmear the cream cheese mixture on the corn and serve topped with the sliced fresh scallions and additional everything seasoning.
- Alternatively, this can be made into a dip: cut the corn off the cob, mix with the cream cheese mixture and fresh scallions, pour into a baking dish, top with any good melting cheese and bake until bubbly. Serve with pretzels or chips.
PARMESAN ROASTED CORN ON THE COB

CORN ON THE COB; STAYS HOT AND FRESH
This is my favorite way of cooking corn on the cob and keeping it hot and fresh for dinner, or for a party. I usually buy Peaches and Cream corn on the cob to cook this way. The quantity of four is simply a formula. Double or triple the recipe, or use as many cobs of corn as you like. Serve with recipe #190648 or recipe #225178. Or, add a toasted tomato sandwich, recipe #98724, for a great meal. If you have any leftover corn, cut the kernels from the cob and add them to soups and chowders, salads, savory pancakes, cornbread or muffins.

- Use only COLD WATER in a large pot.
- For every four cobs of corn add 2 Tablespoons sugar and 2 Tablespoons vinegar to the water. DO NOT PUT SALT IN THE WATER.
- Bring water to a boil uncovered.
- Add the husked corn on the cob.
- Cook for 6 minutes, uncovered.
- Remove corn as desired to serve, leaving the rest of the cobs in the water.
- Reduce heat to simmer. The corn, left simmering in the hot water, will stay fresh for hours.

- In a large pot place 2-3 inches of water. Add milk and sugar and mix well. Add corn.
- Cover and bring to a boil. Let them low boil for 3-5 minutes watching that water level doesn't go too low. Add more water if needed.
- Lower heat and simmer for 15-20 minutes.
- Rermove and serve immediately nice and hot with butter and salt.
- We usually eat our food while these are cooking and then clean our plates or get clean ones and enjoy our corn. We always say"don't forget to leave room for the corn!" and we always save these treats for last.

- Preheat grill for medium-high heat.
- In a medium bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt, and pepper. Blend in the softened butter. Apply this mixture to each ear of corn, and place each ear onto a piece of aluminum foil big enough to wrap the corn. Wrap like a burrito, and twist the ends to close.

- - Pull husks down without removing them. Pull off the silk and throw out. Stand corn up in a bowl cover the pulled down husks and soak in water for 10-15 minutes.
- - Hold the cob at the end and spread 1 tablespoon of garlic butter (each cob), sprinkle with salt and pepper.
- - Pull husks back up over cob.
- - Roll each cob in a sheet of foil twisting on the ends.
- - BBQ or Bake (in oven place on a baking sheet) 350 degrees for 20-25 minutes (turning every 5 minutes).
- - Remove foil and husks, discard and enjoy.
- *All steps can be done ahead of time up to cooking (refrigerate until ready to cook). This is a great time saver for camping, company or just because.

- In a large deep dish pan melt butter. Add chopped onions and cook over medium heat until onions are tender. Stir in flour and combine until smooth.
- Next add milk, cream, corn, sugar and white pepper to onion mixture. Stir well and continue cooking over medium heat for three minutes.
- For this next step I like using an Immersion Blender. Remove 1 cup of the corn mixture and place in a medium bowl. Blend corn until smooth and then return corn to pan. Continue cooking over medium heat for a few minutes. Transfer cooked corn to a 2.5 quart serving bowl and enjoy!
