Steps:
- Mix egg, bread crumbs, salt, and black pepper together in a large bowl. Break ground beef into small pieces and add to the bowl; mix well with your hands until beef is evenly moistened. Shape the beef mixture into four patties.
- Heat a skillet over medium heat. Cook patties in hot skillet until completely browned, 2 to 3 minutes per side; remove to a platter and drain grease from skillet.
- Return skillet to medium heat. Stir tomato sauce, green onions, brown sugar, Worcestershire sauce, and yellow mustard together in the skillet. Gently lie the patties into the sauce; bring liquid to a boil, reduce heat to medium-low, and simmer until the patties are very firm, hot, and grey in the center, about 10 minutes more. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

SEAFOOD CREOLE
This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

Steps:
- Mix together oregano, salt, white pepper, black pepper, cayenne pepper, thyme, and basil in a small bowl; set aside.
- Melt butter in a large Dutch oven over medium heat; stir in tomato, onion, celery, green bell pepper, and garlic. Cook and stir until the onion is translucent, about 5 minutes.
- Stir in chicken stock, tomato sauce, sugar, hot pepper sauce, and bay leaves. Reduce heat to low and bring sauce to a simmer. Stir in seasoning mix and simmer until the flavors have blended, about 20 minutes.
- Gently stir in rock shrimp, bay scallops, and haddock; bring sauce back to a simmer and cook until the shellfish and fish are opaque, about 20 more minutes. Remove bay leaves to serve.

CREOLE OKRA
A yummy vegetarian side dish, easy to make. Taste holds up for leftovers. The use of frozen okra makes this a year-round favorite in our family.

Steps:
- Heat the olive oil in a large skillet over medium heat. Saute the onion and garlic until limp. Add the green pepper; cook and stir until tender. Drain the tomatoes, reserving juice, and pour them into the skillet. Season with thyme, parsley, cayenne, salt, and pepper. Simmer for 5 minutes over medium heat.
- Add the frozen okra, and pour in enough of the reserved juice from the tomatoes to cover the bottom of the pan. Cover, and cook for 15 minutes, or until okra is tender.

CREOLE MEAT LOAF PATTIES

A mild spicy heat combined with sweetness; add Emeril's Essence or a few drops of Tabasco sauce for more zing. Please read reviews for insight on amount of Splenda and adjust to your own preference; a little bit of Splenda goes a long way. (I double-checked the source, and I typed the ingredient amount accurately.)

- Plug in and generously spray both sides of double-sided electric contact grill with butter-flavored cooking spray and preheat for 5 minutes.
- MAKE PATTIES:.
- Meanwhile, in a large bowl, combine meat, bread crumbs, onion, green pepper, catsup and Worcestershire sauce.
- Using a 1/3-cup measuring cup, form into 6 patties.
- Evenly arrange patties on prepared grill. Close lid and grill for 6-8 minutes.
- MAKE SAUCE:.
- Meanwhile, in a medium saucepan, combine tomato sauce, undrained tomatoes, Splenda, and parsley flakes. Cover over medium-low heat while patties are grilling, stirring occasionally.
- For each serving, place 1 patty on a plate and spoon about 1/4 cup tomato sauce over top.
CREOLE MEAT LOAF
This meat loaf is not spicy, despite the name. It is a mix of ground beef and pork, with a nice creole sauce on top. It originally came from an old Southern Living cookbook, but the recipe has been changed significantly since its publication. If you would like, put the cheese of your choice on the meatloaf before adding the creole sauce. Also, feel free to substitute creole seasoning for the salt and pepper!

- For the meat loaf, mix the first 10 ingredients thoroughly in the order given and shape into a loaf. Pack into a greased 9 x 5 x 4 inch loafpan. Cover with creole sauce and bake at 350 degrees for 1 hour.
- For the creole sauce, melt the shortening; add flour, and cook over medium heat until a rich brown, stirring constantly.
- Add chopped pepper, onion, and garlic. Let simmer until wilted. Add milk.
- Add tomotoes, salt and pepper (or creole seasoning), and worcestershire sauce. Let come to a boil and cook for 4 to 5 minutes.

- In a large bowl, combine the milk, egg, green pepper and onion. Stir in the crackers, salt, mustard and pepper. Crumble beef over mixture and mix well. Pat into an ungreased 8x4-in. loaf pan. , Bake, uncovered, at 350° for 1-1/4 hours or until no pink remains and a thermometer reads 160°. Drain. , Let loaf stand in pan for 10 minutes. Meanwhile, in a small saucepan, combine the sauce ingredients. Cook until heated through. Turn loaf out onto a serving platter. CREOLE MEATLOAF (GLUTEN FREE)
Very tasty, gluten free meatloaf using rice as the binder. Not sure where the recipe originated. If I am pressed for time, I will bake these in muffins tins instead of the loaf pan. Also, my family prefers the celery, onion and bell pepper be sauteed in a little broth or oil prior to adding to the meat.

- Preheat oven to 350.
- Combine meat, rice, onion, celery, bell pepper, salt, thyme and egg. Add 1/2 can of tomato sauce.
- Blend and pat gently into 9 X 5 loaf pan.
- Bake 45 mins - 1 hour.
- Pour off grease.
- Top with remaining 1 1/2 cans tomato sauce (or 1/2 can sauce and ketchup).
- Cook 10 more minutes or until sauce is heated.

- Heat gas or charcoal grill for indirect cooking,.
- Mix 1/4 cup of the ketchup and the honey in a small bowl; set aside. Mix remaining 1/4 cup ketchup, Worcestershire sauce, garlic powder, pepper and egg in large bowl. Stir in onion and breadcrumbs. Stir in beef until well mixed.
- Shape beef mixture into 6 patties, 3/4 inch thick and about 3 1/2 inches in diameter. Wrap 1 slice bacon around each patty; secure with toothpick.
- Carefully spray grill rack with cooking spray. Place patties on unheated side of 2 burner gas grill or over drip pan on charcoal grill (medium heat). (If using one burner gas grill, cook over low heat.) Cover grill; cook 20 to 25 minutes or until slightly pink in center. Using spatula, turn patties over. Brush with ketchup mixture. Cover grill; cook 5 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160 degrees F and bacon is crisp.

CREOLE MEATLOAF
I don't care for Weetabix cereal as a cereal itself, but the recipe on the box I saw years ago for using the cereal in meat loaf is insanely yummy! I figured, people put corn flakes in meat loaf, so why not try this. I add green bell peppers as well as the red called for.

Steps:
- Combine the ground beef, egg, crushed Weetabix, 1/2 cup of the chili sauce, 1/4 cup each of the peppers, and 1/2 of the chopped onion in a bowl. Mix well but don't over handle.
- Place in a large loaf pan, pat firmly.
- Bake at 375°F, for 35 minutes.
- Meanwhile, fry the remaining peppers, onion, and the garlic in the oil until tender. Stir in the remaining 1/2 cup chili sauce, and simmer about 5 minutes.
- Drain excess fat from the meat loaf. Top with the sauce and bake a further 10 minutes.
- ENJOY.
