CROATIAN "BLITVA" / OR SPINACH (THE OTHER WAY)

Everybody in Croatia knows how you make your blitva. But, there are people who don't like garlic, so this is one of the ways without garlic. You can also make it with spinach.

Steps:

  • Wash and cut spinach/"blitva" leaves and put it aside.
  • Warm the butter in a large pot; add spinach/"blitva" and mix until butter covers the leaves. Add half of anticipated cream, and the whole amount of parmesan, chive, nutmeg, salt, pepper. Heat it all for 2-5 minutes.
  • Replace the lot into a refractory pot, cover with the rest of the cream. Bake it in the hot oven (200°C) 5 to 10 minute Serve hot.

750 g spinach (also with "blitva")
45 g butter
125 g sour cream
2 tablespoons parmesan cheese (grated)
1 tablespoon chives (sliced)
1 teaspoon nutmeg (grated)

BLITVA (CROATIAN SWISS CHARD DISH)

A traditional dish in Dalmatian cuisine, this is very easy to make. It makes a perfect side for fish, cooked meat or, my favorite, cured meat such as prosciutto. It can be made more creamy when potatoes are very well cooked, or soupy when more liquid is preserved. On my scale this would be 3.5 Stars (please see how I rate recipes).

Blitva (Croatian Swiss Chard Dish) image

Steps:

  • Bring a large pot of salted water to a boil.
  • Add peeled and cubed (1/2-1 in cubes) potatoes.
  • Rinse the Swiss chard, remove tough stems, and cut into 1/2 in strips (or just tear into large pieces).
  • When potatoes are almost done, add the Swiss chard, and cook all together for an additional 10 minutes (15 minutes if the chard is older).
  • Sauté garlic on olive oil, and add the cooked drained chard and potatoes to it (you may keep some water so that it looks like a thick soup).
  • Salt and pepper to taste.
  • Stir and cook for 1 more minute in order to bring all flavors together.

2 lbs swiss chard (preferably red)
3 -4 medium potatoes
2 -3 garlic cloves
2 -3 tablespoons olive oil
salt
pepper

  • Cobanac. A traditional Croatian food for those who love meat, cobanac originates from the eastern Croatian region of Slavonija. It is a spicy all-meat stew, made with lamb, pork and veal.
  • Manestra. A dish that’s typical in Istrian restaurants, ‪manestra is a definite must-try if you want to try something really tasty. An interesting mix of flavors, this is not your usual bean soup.
  • Istrian soup. Definitely not your ordinary soup, this Croatian favorite is served in a traditional jug made of ceramic called bukaleta. The jug is then passed around so everybody in the table can have a share.
  • Pašticada. A dish that’s typically served in homes and restaurants along the Dalmatian coast is the flavorful pašticada. This is basically a beef stew made with a special sauce and is best with gnocchi or homemade pasta.
  • Punjene paprike. If you’re in Croatia for a summer holiday, punjene paprike or stuffed peppers is a must-try. A popular traditional Croatian food during the hot months, this dish is light yet filling, perfect for picnics and barbecue parties.
  • Peka. A traditional Croatian dish with an interesting story, Peka used to be known as a farmer’s meal. The slow cooking process takes a while, so the person gets to go out and work.
  • Soparnik. If you love pie, Soparnik is something you need to try when in Croatia. A dish that’s unique to Poljica, located between Split and Omiš — this is is a great alternative to pizza.
