Steps:

  • Season chicken with salt and pepper to taste. In a shallow plate, spread Parmesan cheese. Divide chicken into three parts and dip seasoned chicken in eggs, then coat well with Parmesan cheese. Repeat until all of the chicken pieces are well coated (if you run short on egg and Parmesan, add one more egg and more Parmesan as needed).
  • In a skillet, melt butter or margarine over medium high heat. Cook chicken, stirring frequently, until golden brown.
  • Reduce heat and add wine. Cover and simmer over low heat for 20 minutes

Slow-Cooker Chicken in Red Wine image

Steps:

  • Line microwavable plate with microwavable paper towel. Add bacon; cover with paper towel. Microwave on High 3 to 5 minutes or until crisp. Crumble bacon.
  • Spray 5- to 6-quart slow cooker with cooking spray. Place chicken in cooker. Add carrots, onions, bacon, salt, pepper, thyme, garlic, bay leaves, wine and broth.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Skim any fat from surface of chicken mixture. Stir in mushrooms. In small bowl, mix flour and water; stir into chicken mixture. Stir in parsley.
  • Increase heat setting to High. Cover; cook about 30 minutes longer or until mixture is thickened. Remove bay leaves before serving. Sprinkle with remaining chopped parsley.

Herb Roasted Chicken With Vegetables and Wine (Crock Pot) image

Steps:

  • Put carrots, onions, and celery in bottom of crock pot.
  • Thoroughly wash chicken and pat dry. Sprinkle cavity with salt, pepper and parsley. Place in crock pot, dot chicken breast with butter.
  • Sprinkle with parsley and tarragon or thyme, add wine.
  • Cover and cook on Low 8 to 10 hours (High: 3 1/2 to 5 hours).
  • With a slotted spoon, remove chicken and vegetables to a platter, keep warm.
  • To make gravy (optional): To remaining pan juices stir in a tablespoon of cornstarch -OR- 3 tablespoons of flour. Heat through on HIGH in crock pot, -or- on medium heat in a separate sauce pan, stirring until gravy is smooth and thickened, about 5-10 minutes. Stir in a tablespoon or two of milk or cream, if desired.
