HEARTY HAM PIE
I've been making this pie for a few years now. I like to vary the vegetables and meat depending on what I have on hand. I've made it with leftover turkey, sausage and lamb roast. In summer, it's a perfect brunch meal with a salad; in winter, add a loaf of homemade bread for a great dinner.

- In a saucepan, saute the broccoli, green pepper, mushrooms, onion and garlic in oil until tender. Sprinkle half of the ham and cheese into pie crust. Cover with the vegetables and the remaining ham and cheese. Combine eggs and cream; pour over ham and cheese. Bake at 350° for 45-50 minutes or until knife inserted in the center comes out clean. If needed, cover edge of crust with foil to prevent excess browning.

- Preheat oven to 325 degrees F (165 degrees C). Press one package crescent roll dough into a 9-inch baking dish; cut remaining package crescent roll dough into 1-inch strips.
- Stir eggs, ham, Cheddar cheese, and Parmesan cheese together in a bowl; pour mixture into prepared baking dish. Arrange crescent roll strips over ham mixture creating a crisscross pattern.

Steps:
- Preheat oven to 350 degrees. Spray a 9" deep dish pie plate with cooking spray. In a medium bowl mix slightly beaten egg into the mashed potatoes; press into the bottom and up the sides of the pie plate as if making a pie crust. Bake in preheated oven for 30 minutes or until slightly browned. Set aside.
- Meanwhile slice kielbasa into 1/2" slices then cut into quarters; spray large skillet with cooking spray; add kielbasa and drained tomatos and saute until the kielbasa is cooked through and slightly browned. Spoon into the baked mashed potatoe crust and sprinkle with shredded swiss cheese.
- Bake 30 minutes until cheese is bubbly and browned; let set for 10 minutes before slicing like a pie.

- Preheat oven to 450 degree F.
- Thaw potatoes by running water over unopened package.
- Combine potatoes, egg and onion powder.
- Press into well greased 9" pie pan.
- Bake 20 minutes.
- Filling: Cook sausage links according to package directions.
- Blot links on paper towels.
- Place links in pie crust.
- Spoon tomato/ corn mixture over links.
- Bake 15 minutes more.

- Heat oven to 200C/180C fan/gas 6. Fry the soffrito mix in the oil until it softens and starts to turn golden, add the mushrooms and cook for a couple of mins. Add the peas and ham and cook until the peas are heated through. Stir in the cream and mustard, then turn off the heat. Season well and tip into a pie dish, ovenproof bowl or large shallow mug.
- Roll out the pastry using a little of the flour until it is larger than the top of your dish. Lightly score a criss-cross pattern into the pastry. Wet the rim of the dish with water and lift the pastry on top, pressing the pastry on to the edges of the dish.
- Cook for 20-25 mins or until the pastry is risen and golden.

- Place one of the pie crusts in a 9” pie pan (use a deep-dish pie pan if you have one) and lightly brush with egg whites. Bake in the oven for about 5 minutes, remove, and pour in the sauce/veggie mix. Cover with the other crust and seal the edges. Cut some slits in the top, brush with egg whites and bake for about 35-40 minutes or until the crust is golden brown.

- Mince the onion and fry it in a frying pan with a drizzle of olive oil. Then add the bacon to grill. Butter and lightly flour the inside of the loaf pan. Cut out the pie dough and place it in the loaf pan so that it is perfectly covered. Next, cook the potatoes in salted water.
- Place 1 layer of 12 salami slices at the bottom of the dish on top of the dough. Place the ham on top and then a layer of sliced potatoes. Spread half of the bacon and onions on top and cover with half of the cheese slices. Place the sausages on top and the rest of the potatoes slices around them.
