Steps:
- Fry ground beef and onions in a large pan until beef loses its pinkness; drain.
- Place in crock pot with remaining ingredients, and stir.
- Simmer on low for 7 hours, then turn to high setting.
- To make dumplings, combine flour, cheddar cheese, cornmeal, and baking powder in a medium bowl.
- In a small bowl, mix beaten egg, milk, and oil.
- Add to flour mixture, and stir with a fork until just combined.
- Drop dumplings by tablespoonfuls into chili.
- Cover and cook for 50-60 minutes more.

My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

- Combine the ground turkey, onion, bell peppers, garlic, crushed tomatoes, black and pinto beans, corn, chili powder, pepper, and salt in the bowl of a slow cooker.
- Cook on low for 6-8 hours or high for 4 hours.
- Once the chili has cooked for 6-8 hours, make the dumplings: Combine the eggs, melted butter, milk, and brown sugar in a large bowl.

Steps:
- Place the Tomatoes, Tomato Paste, Sugar, and Ortega Chilies in crock pot set on high.
- Cook the Salt Pork in a large pan over med-high heat to render it's fat, remove and save half of the drippings.
- Well brown half of the meat.
- Drain on paper towel.
- Cook the other half of the meat.
- when it's done put the first half in the crock pot and drain the second half.
- Wipe the pan.
- add the rest of the drippings.
- Saute (stir Fry) Onions and Jalapenos'til they're almost translucent, 5-10 min.
- Add Garlic and spices, Saute another 4 min.
- Place last of the meat and the vegetables in the crock pot, mix well.
- Place Beer (or chicken stock) in a sauce pan over med-high heat.
- KEEP AN EYE ON IT!
- IT BOILS EASILY AND BOILED OVER BEER IS A MESS TO CLEAN UP!
- Top dried chilies.
- Carefully split in half with a sharp knife, seed and vain.
- Place in beer and cook at a slow boil for 10 min.
- Remove from heat.
- Place one of the chili halves on a plate and scrape the pulp from the skin with the side of a spoon, discard the skin.
- Repeat'til all are cleaned.
- Place the pulp with a bit of the beer in a blender and puree.
- Add the puree and the remaining beer to the crock pot.
- Mix well.
- Cover.
- Reduce heat to low.
- Cook 8-10 hours.
- Mix Masa Harina with a cup of cold water.
- Stir into pot.
- Cook another 30 min. to thicken.
- Serve with beans, rice, pasta, or over toasted slices of a baguette of French bread.
- Top with chopped Onions and fresh chopped Cilantro.

- In a skillet, heat 1 tablespoons oil over medium high heat. Add beef and cook, stirring and breaking meat up with the back of a spoon, until beef is no longer pink. Transfer to slow cooker stoneware. Drain off liquid in pan.
- Reduce heat to medium and heat remaining oil in pan. Add onions and cook until softened. Add garlic, cumin seeds, pepper, chili powder, salt, allspice and cayenne and cook, stirring, for 1 minute. Add cocoa and cornmeal and stir well. Stir in Worcestershire sauce, tomato paste, tomato sauce and beef broth and bring to a boil.
- Pour mixture into slow cooker stoneware. Add corn and beans and stir to combine. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours, until hot and bubbling.
- Add olives and green pepper to slow cooker and stir well. Taste and adjust seasoning, adding hot pepper sauce if you prefer a spicier chili.
- TO MAKE CORNBREAD TOPPING: In a bowl, combine flour, cornmeal, granulated sugar and baking powder. Add melted butter, milk or buttermilk and egg and stir well until ingredients are combined. Add grated Cheddar cheese and chopped green chilies, including juice, and green onions, if using, and stir well.
- Drop cornbread batter, by spoonfuls, over the top of the mixture. Cover and cook on HIGH for 30 to 40 minutes, until topping is set. Serves 8 to 10.
- TIP: This quantity of topping works best in a large, oval slow cooker. If you're using a tall, narrow slow cooker, make half the amount of batter.

- Cook and stir ground beef in a skillet over medium heat until no longer pink, about 10 minutes. Drain.
- Transfer ground beef to a slow cooker.
