Steps:

  • Pour the heavy cream, vanilla and coffee beans into a saucepan and place over medium-low heat. Bring the cream to a brief simmer; do not boil or it will overflow within seconds. Remove from heat and strain to remove the beans.
  • In a large bowl, whisk together the egg yolks and the sugar until the sugar dissolves and the mixture is lemon-colored, about 3 minutes. Temper the yolks by gradually whisking the hot cream into the yolk and sugar mixture (do not add the hot cream too quickly or the eggs will cook.) Stir in the brewed coffee and melted chocolate.
  • Preheat the oven to 325 degrees F.
  • Pour the egg-cream mixture into 6 (8-ounce) ramekins or cappuccino cups, filling 3/4 of the way full with mixture. Fill a large, shallow baking pan with 1/2-inch of warm water. Carefully place the ramekins in the water bath and bake for about 35 minutes, the center should jiggle slightly. Remove the pan from the oven and let the ramekins cool in the water for 10 minutes. Then pop them in the refrigerator to chill for at least 2 hours.

Steps:

  • In large saucepan, combine sugar, cocoa and salt.
  • Add hot water slowly, mixing well.
  • Cook over medium heat, stirring constantly, until mixture boils.
  • Boil and stir 2 minutes.
  • Add milk; heat to serving temperature, stirring occasionally. DO NOT boil.
  • Remove from heat; add vanilla, cinnamon if desired, and whip with a whisk.
  • Serve hot, with whipped cream or marshmallows if desired.

Steps:

  • Make the peppermint syrup: In a small saucepan over medium heat, bring the water and sugar to a boil, stirring until sugar is dissolved (about a minute). Remove from heat and stir in the peppermint extract. Store in a glass jar in the refrigerator for up to 3 months.
  • Make your peppermint mochas: In a 3-quart or larger slow cooker/Crock Pot, stir together the milk, espresso/coffee, chocolate chips, and peppermint syrup.
  • Cook covered on low for about 2 hours, stirring occasionally to help distribute the melting chocolate, until steaming. You can also cook it on high for about an hour and fifteen minutes (depending on your slow cooker), stirring often - just watch it a little more carefully when the slow cooker is on high. Reduce heat to warm and keep covered once the mocha has heated to steaming.
  • Serve in festive mugs, topped with whipped cream and a sprinkle of chocolate shavings.

  • Preheat the oven to 325 degrees. Line a shallow baking pan with a cloth towel and set aside.
  • Place the cocoa powder in a mixing bowl. In another bowl, combine the skim milk and the evaporated milk. Slowly whisk about 3 tablespoons of the milk mixture into the cocoa powder until it forms a thick paste. Whisk in the remaining milk mixture until thoroughly combined and set aside.
  • In a large bowl, combine the egg, egg white, granulated sugar, and salt and whisk together until thoroughly combined. Whisk in the cocoa-milk mixture until thoroughly combined. Divide the mixture among four 4-ounce ovenproof demitasse cups and place in the prepared baking pan; fill the baking pan halfway with water. Transfer to the oven and bake until the puddings are set when lightly jiggled, about 50 minutes.
  • Remove the puddings from the water bath, transfer to a wire rack, and let cool 20 to 30 minutes. Dust the puddings with confectioners' sugar and serve warm.

  • In a shallow baking dish combine the flour, 1/2 tsp salt and 1/2 tsp pepper; mix to combine. Toss the meat in the flour mixture and coat all pieces evenly. Place the insert of a cast aluminum slow cooker over medium heat. If your slow cooker insert is not stovetop safe, use a skillet. To the bottom of the insert (pan) add 2 Tbl of oil. When the oil starts to shimmer, add the flour coated pieces (make sure to shake off the excess flour) to the pan. Do not crowd the pan. Sear on at least 2 sides (sometimes I only do 3 sides) until they are browned. Remove the seared ones to a bowl and repeat the process until all of the pieces of done. *You may need to add a Tbl or 2 to the pan between the browning of the beef
  • Pour about 1/4 cup of stock to the pan and scrape up any browned bits (the good stuff!). Put the insert into the slow cooker shell. To the pot add the rest of the browned bits plus any juices in the bowl. Next add in the onion, mushrooms, thyme, bay leaf.
  • In a bowl whisk together the cocoa powder, soy sauce, coffee, 1/2 tsp salt, 1/2 tsp pepper and remaining stock. Pour that over top the meat and place the lid on top. Cook on low for 7 hours. When done, remove the lid and place the cast aluminum insert onto the stove top with the heat set to medium low. Fish out the thyme stems and bay leaf.
  • In a small jar or bowl, whisk together the cornstarch and water to make a slurry. Slowly pour the mixture into the meat, stirring to incorporate. Allow to heat for 5-10 minutes or until the mixture thickens and makes a sauce/gravy that coats the spoon. Note – if you do not have an insert that you can move to the stove you’ll need to use a slotted spoon to remove the beef and mushrooms from the pot, add in the cornstarch slurry to your slow cooker while stirring it in and then add the beef back in. Put the slow cooker to HIGH and stir until the gravy/sauce thickens (10-15 minutes). Taste for seasoning and add part or all of the remaining salt and or pepper.
