EASTERN NC PULLED PORK BBQ IN A CROCK POT
It's the best way to make BBQ short of having a pig pickin'! Eastern NC BBQ done the right way. No tomato in sight! The taste reminds me of Smithfield's, which is the best BBQ in my opinion. This BBQ goes great in a sandwich topped with a scoop of sweet coleslaw, side of hushpuppies, and sweet tea. Mmmmmm. Enjoy!

Steps:
- Quarter and slice the onion into little arches. Place about half an onion's worth in the crock pot as to line the bottom.
- Place the whole pork shoulder into the crock-pot. Take just a small amount of sauce to dampen the shoulder.
- Cover with a generous coating of spice rub, if desired.
- Top with remaining onion slices. Take 75% of the sauce and pour it around the pork shoulder. Then pour the white and cider vinegars around the pork.
- Cover and cook on low for 8-12 hours.
- When cooking is complete, remove cover and then carefully pull the bone out of the pork shoulder (BE CAREFUL! IT WILL BE HOT!).
- Carefully remove the meat and half of the onions from the crock-pot and put into a large bowl, leaving behind as much of the cooked vinegar solution behind as possible. A slotted spoon may be needed.
- Then with two forks (or your hands once the meat has cooled a little, if you are so inclined), "pull" (shred) the meat.
- Pour in most of the remaining, "uncooked" sauce, saving a little to add to BBQ sandwiches as desired. (Personally, I prefer using Texas Pete on my sandwiches.).
- Serve as sandwich or BBQ plate.

Everybody has a favorite type of barbecue. Eastern NC BBQ has a pure salty savoryness without any ketchup base. The following recipe is awesome served on large sandwich buns with potato chips. And it's easy--a great recipe to set in the crock pot and come home to an almost-finished meal. For cost savings, I often buy a large pork roast when it goes on sale and just cut in in two halves; use one for the recipe. Pick a nice lean cut; not a Boston butt. Even better as a leftover!!

Steps:
- Place roast in crock pot. Brush with BBQ sauce.
- Cook on low setting for 8 to 10 hours.
- Just before serving, remove any fat then use a fork to shred all the meat.
- Stir together all remaining ingredients (I just mix in my measuring cup), and pour over pork. Toss pork in sauce.
- Scoop onto sandwich with slotted spoon (to avoid soggy buns).

- Place onions in crock pot. Blend brown sugar, paprika, salt and pepper; rub over roast. Place roast in crock pot.
- Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, mustard, garlic salt and cayenne pepper and stir to mix well. Drizzle about 1/3 of mixture over roast. Cover and refrigerate remaining mixture. Cook roast on low for 8-10 hours. Remove meat and onions, discard onions and shred meat. Add juices from crock pot and remaining vinegar mixture (a portion may be reserved to pass). Serve plain or as sandwiches.

- 1. In a medium saucepan, stir together the ketchup, bourbon, ¼ cup brown sugar, and ½ teaspoon smoked paprika. Bring to a boil, then reduce the heat to simmer for 10 minutes. 2. Meanwhile, in a 5- to 6-quart slow-cooker bowl, combine the remaining ¼ cup brown sugar, 2 teaspoons smoked paprika, 1½ teaspoons salt, and 1 tablespoon freshly ground black pepper. Add the pork and rub the mixture all over the meat. Turn the pork fat side up. 3. Pour ¼ cup sauce and 1 cup water into the slow-cooker bowl. Refrigerate the remaining sauce for serving. Cover and cook as the manufacturer directs on the low setting until the meat is falling-apart tender, about 8 hours. 4. Carefully transfer the meat to a large bowl; discard the fat and skin. Using two forks, shred the meat into small pieces. Carefully pour the sauce from the slow cooker into fat separator. Pour the sauce over meat, leaving behind and then discarding the fat. Serve in the buns with the reserved sauce.

CROCK POT PULLED PORK WITH SAUERKRAUT
Surprisingly tasty and the result of a mistake that left me needing to come up with a dinner with super easy prep. Freezer to table. I grabbed my crockpot, took a pork tenderloin out of the freezer stuck it in the pot & free poured apple cider I had on hand over it. Put it on & went to work. Later in the day the meat was cooking well, but for our tastes, I knew I had to kick up the flavor. I only had a few minutes to spare. That's when I came up with the other 2 ingredients. Tossed them in & turned down the heat & went back to work. How simple is that! I don't think I spent 5 minutes altogether!

- Place the tenderloin in crockpot with the salt & peppercorns. Pour apple cider over. Turn to 300 degrees for 3 hours.
- Pour in brandy, add sauerkraut, test for salt, add more to taste, reduce heat to 200 degrees for another 3 to 4 hours.

i made this last week, my first attempt at pulled pork, and it was a winner. i had a spicy carolina style pp sandwich at a native american festival, and got into a chat with the cooks. this was the recipe, from what i can recall as it was told to me. by the way, this is by no means a low fat dish. trying to make it low fat will just not be the same. please enjoy it the way it was meant to be. pork fat rules!

- combine the brown sugar, paprika, salt and pepper, and rub the mixture over the roast. wrap tightly in plastic, and refrigerate a few hours, overnight is best.
- in a bowl, combine the vinegar, worcestershire sauce, red pepper flakes, sugar, mustard, garlic powder, and cayenne pepper. mix well.
- place the quartered onions in the bottom of the crock pot. unwrap the roast, and place on top of onions. drizzle most of the vinegar mix over the roast, reserving some to add to the shredded meat at the end.
- cover and cook on low for 7 to 8 hours, or high for 4 to 5 hours.
- remove the meat and onions to a cutting board. remove skin and set aside. using two forks (or your fingers, if you have asbestos hands), pull and shred the pork. chop the onions, and mix into the shredded meat. using a fork, remove some of the fat from under the skin, mince, and add to the shredded meat and onions as needed for moisture and flavor.
- serve on warm buns or crusty hard rolls, with the remaining vinegar mixture on the side.

- Season pork all over with salt. Cover with plastic wrap and refrigerate overnight. The next day, stir together garlic and oil. Mix together sugars, paprika, pepper, mustard, and thyme. Rub oil mixture over pork, then sugar mixture. Let stand while you heat grill.
- Open grill vents. Prepare a chimney with 80 charcoal briquettes; place on small lower grate. Ignite; let burn until top layer is turning ash gray, about 20 minutes. Place a small disposable roasting pan on one side of grate. Add 2 cups hot water. Pour coals in on other side. Top with main grill grate.
- Place pork on grill, over pan of water. Cover grill with lid, keeping top and bottom vents halfway open. Every hour, add briquettes (about 16) as needed to keep grill temperature at a steady 300 degrees. Cook until a thermometer inserted in thickest part of pork registers about 200 degrees, 7 to 8 hours.
- Let meat stand 20 minutes before pulling apart with two forks. Meanwhile, whisk together sauce ingredients in a bowl. Toss pulled pork with 1 cup sauce. Pile pork on buns, then top with slaw and cucumber. Serve, with pickles and remaining sauce on the side.

I got me a crock pot,, nuff said.. The long and low melted most of the greasiness out of the shoulder, and the vinegar apple juice combination added a sweet moistness to the final product.

- Combine the rub spices and coat the shoulder.
- Bag the rubbed shoulder overnight in the fridge.
- Put Apple juice and vinegar in crock pot and add the shoulder and the rub that's stuck on it.
- Start the pot on high, turn down to med after an hour and a half.
- Cook for 12 hours total, 10 hours if your pot has no medium setting.
- Remove the shoulder and let rest for at least half an hour.
- Pull shoulder apart with a couple of forks.
- Place the pork on a cheap bun or Wonder bread with your favorite barbecue sauce and some slaw if you want to be traditional.

- Sauté the onions in the oil until soft. Add garlic, chili powder, and pepper and cook another minute or so. Add chili sauce, brown sugar, vinegar, and Worcestershire sauce. Heat till boiling stirring constantly.
