Steps:
- In a medium saucepan over low heat, melt the butter and whisk in the flour. Cook, whisking constantly for 2 to 3 minutes, being careful not to brown the flour. Whisk in mustard, Worcestershire sauce, salt, and pepper until smooth. Add beer and whisk to combine. Pour in cream and whisk until well combined and smooth. Gradually add cheese, stirring constantly, until cheese melts and sauce is smooth; this will take 4 to 5 minutes. Add hot sauce. Pour over toast and serve immediately.
REAL WELSH RAREBIT
A classic version of this dish was shared with me years ago. This is is my adaptation to more local ingredients. If you don't like beer, you can replace it with milk and it will still taste great. Serve over toasted bread or English muffins.

Steps:
- Melt the butter in a saucepan over low heat; blend in the flour, salt, pepper, mustard, Worcestershire sauce, and hot pepper sauce; continue cooking and stirring until the mixture is smooth and bubbly, about 5 minutes. Remove from heat; gradually stir in the milk; return to heat and stir continually until the mixture comes to a boil. Slowly pour in the beer; cook 1 minute more while still stirring. Melt the Cheddar cheese into the mixture in small portions until completely incorporated. Remove from heat.

CROCK POT WELSH RAREBIT
I found this in the "Fix-It and Forget It" cookbook and I am posting for safekeeping. It is a simple American version that is suggested to be used as a brunch dish. I've never tried this recipe, so I will update if I make any changes.

Steps:
- In slow cooker, combine beer, mustard, Worcestershire sauce, salt and pepper.
- Cover and cook on High 1-2 hours, until mixture boils.
- Add cheese, a little at a time, stirring constantly until all the cheese melts.
- Heat on High 20-30 minutes with lid off, stirring frequently.
- Serve hot over toasted English muffins or over toasted bread cut into triangles.
- Garnish with strips of bacon and tomato slices.

LOW FAT WELSH RAREBIT
A healthier, lower in fat version of Welsh Rarebit which I found on an English website and which I am posting here for the 2005 Zaar World Tour. This healthier C21st version of the traditional Welsh Rarebit uses less cheese and - something which will no doubt horrify culinary conservatives - includes some vegetables. Next step is hoping that your children like it. Perhaps the name could lure them? Not the Low Fat bit! Don't mention that! For children, you may also want to omit the cayenne pepper. Perhaps substituting it with a herb which you know is acceptable to them. I was glad to see that this recipe did not use low-fat cheese. Though I make every effort to reduce the content of fat in most of the things I cook, I've concluded that I'd rather omit cheese than use low-fat cheese. To me, it's completely tasteless.

- In a large saucepan, whisk the milk into the flour, and bring it to the boil over a medium heat and stir in the salt and cayenne pepper.
- Reduce the heat to a simmer and stir in the bell pepper and the broccoli, and simmer until the bell pepper is tender and the sauce is slightly thickened, about 4 minutes; add the Cheddar cheese and the mustard and stir just until the cheese is melted, about 1 minute.
- Place 1 slice of toast on each of 4 plates and spoon the vegetable and cheese mixture over the top.

CREOLE RABBIT (RAREBIT)
First off, there is no rabbit in this recipe. This is a take-off from the Welsh Rabbit with a New Orleans flavor. I recently moved my mother to a retirement home and this was in her recipe box. It says "For a Lenten main dish, omit the bacon and serve over fluffy rice".

Steps:
- Cook bacon until crisp.
- Add onion and green pepper and cook until tender but not brown.
- Add tomatoes, salt, pepper and Worcestershire sauce.
- Simmer uncovered 15 minutes.
- Meanwhile melt butter, blend in flour.
- Gradually add milk and cheddar cheese.
- Cook until thickened.
- Serve over toast.
- Use cheddar sauce first and top with creole mixture.

CHEESY WELSH RAREBIT
An inexpensive but savoury dish. It may have originally been a French dish, as there are old French culinary references to "lapin gallois". When I was a child, our family had this as a bedtime snack a couple of times a week. Never tired of it.

Steps:
- Preheat a broiler.
- Place the bread slices on a baking sheet.
- Place under the broiler and toast, turning once, until golden brown on both sides, 30-40 seconds on each side.
- Remove from the broiler.
- In a small saucepan over medium heat, combine the cheddar and the dark ale.
- When the cheese melts, add the butter, Dijon mustard, ½ teaspoon salt, ¼ teaspoon pepper and the cayenne, and whisk together until smoothly melted and combined, 1-2 minutes.
- Cut each piece of toast in half, diagonally, and arrange around the edges on a flameproof platter.
- Pour the cheese mixture over the toasts so they are covered completely.
- Place the platter under the broiler and broil until the cheese bubbles and starts to scorch in places, about 2 minutes.
- Remove from the broiler and serve piping hot.
