BAKED CINNAMON APPLES (CROCK POT)

This is a super rich indulgence that is very much like the middle of an apple pie. A great recipe for those apples that are sitting in your fridge that nobody wants to eat. Prep time includes time to peel the apples by hand (but you don't have to peel them if you don't want to). Enjoy!

Baked Cinnamon Apples (Crock Pot) image

Steps:

  • Put all ingredients EXCEPT BUTTER into crock pot; stir well, coating all apple slices, and place slices of butter on top.
  • Cook on HIGH for 1-1/2 to 2 hours OR cook on LOW 3-1/2 to 4 hours, stirring once half way through.
  • Serve and enjoy!

6 large very tart apples, cored, sliced and peeled (peels on is okay too!)
1 cup golden raisin
1 cup granulated sugar (or less if you have sweeter apples)
1/4 cup light brown sugar, packed
1 tablespoon cinnamon
1/8 teaspoon nutmeg
3 tablespoons cornstarch

  • Put first 5 ingredients in your crock pot.
  • Stir well to coat the apples with all the spices.
  • Dot with butter.
  • Cook on low about 4 hours.
  • Stir once during cooking.
  • Since crock pot temperatures vary, you should check to make sure that apples are soft but not mushy like apple sauce.
  • It should have the consistency of apple pie filling.
  • This is DELICIOUS warm with vanilla ice cream!
  • It's good plain too.

Steps:

  • Mix flour, brown sugar, 1/2 cup of white sugar, 1/2 teaspoon cinnamon, nutmeg, and salt together in a bowl. Combine butter with the flour mixture using fingers or a fork until coarse crumbs form. Stir in walnuts and set aside.
  • Whisk together 1/3 cup sugar, cornstarch, ginger, and 1/2 teaspoon cinnamon. Place the apples in a slow cooker, stir in the cornstarch mixture; toss with lemon juice. Sprinkle the walnut crumb topping on top. Cover and cook on High for 2 hours or Low for 4 hours, until apples are tender.
