CRUNCHY BAKED FRIES
I never thought I would prefer a baked "fry" over a regular french fry until I tried these. Wow! It is all in the preparation, and it may seem tricky at first, but once you have the technique down, you will be making these all the time. Follow the instructions carefully for best results. Who needs McDonalds?

Steps:
- Peel potatoes and cut them into evenly sliced "fry" wedges.
- Set oven at 475 degrees.
- Place potatos in large bowl and cover with warm tap water for 10 minutes.
- Meanwhile, coat 18 X 12 non stick baking sheet with 4 tablespoons of oil, and sprinkle evenly with 3/4 teaspoon of seasoned salt and 1/4 teaspoon of pepper.
- Drain potatoes, and dry them completely on a triple layer of paper towels (keeping them dry here is key). Wipe out empty bowl, return potatoes, and toss with remaining 1 tablespoon of oil.
- Arrange potatoes in a single layer on baking sheet; cover tightly with foil, and bake 10 minutes.
- Remove foil, and return to the oven for another 10-15 minutes.
- In the last 5 minutes, check for doneness by using a spatula to check for a golden brown color underneath. Turn the fries, and return to the oven for a golden color on the flip sides.
- Dab with a paper towel to remove excess oil, and sprinkle with seasoned salt and pepper to taste. Yum!

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
- Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
- Add the fries to a dry bowl and toss them with the olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.

- Place a rimmed baking sheet in the oven; preheat to 425°F. Combine water, vinegar and 1 teaspoon salt in a large pot and bring to a boil over high heat.
- Cut potatoes into ½-inch-thick sticks. Add to the pot, reduce heat to medium and cook just until starting to become tender, 8 to 10 minutes.
- Carefully remove the potatoes to a clean kitchen towel with a slotted spoon. Gently pat dry, then transfer to a medium bowl and toss with oil. Carefully spread the potatoes in a single layer on the hot baking sheet. Bake, flipping halfway through, until golden and crispy, 30 to 40 minutes.

- Adjust an oven rack to the lowest position and preheat the oven to 475 degrees Fahrenheit. Scrub the potatoes and cut them, lengthwise, into 10 to 12 even wedges. The trick is to first quarter the potatoes lengthwise, and then cut each quarter lengthwise into 2 to 3 wedges (I sliced mine a little too thin).
- Place the sliced potatoes into a large bowl and cover them with hot water (I used hot water from the tap, but others have suggested that pipes can leach impurities into hot water, so it may be best to use cool tap water that has been heated on the stove). Let them soak for 10 minutes. This step releases some of the starch in the potatoes and lets them absorb moisture, which leads to crisp outsides and moist interiors.
- Cover a large, rimmed baking sheet with parchment paper. Drizzle 1/4 cup oil onto the paper, then sprinkle it evenly with about 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Drain the potatoes and pat them dry thoroughly with a tea towel or paper towels. Toss the potatoes with the remaining 1 teaspoon oil and mix evenly.
