CRUSTLESS APPLE PIE IN THE CROCK POT
My sister made this for our Christmas Eve family party and it was a HUGE hit, probably the most popular dessert at the table. Believe it or not is is sugar-free and oh-so simple. The recipe came from a bariatric cookbook.

Steps:
- Peel and dice apples.
- Place apples in a crockpot.
- Mix Splenda and cinnamon in the water and pour over apples.
- Cook on low 4-5 hours or until apples are soft.
- Serve warm with fat-free or sugar-free cool whip.

CRUSTLESS APPLE PIE
I can't make decent pie crust. So I make my pies crustless in a casserole dish instead. When I lived in Massachusetts, where apples are in great abundance every fall, I'd take this to church potlucks where half a dozen heart patients would see to it that I took home an empty, washed plate. They'd missed pie on their low-fat, low-sugar diets. A very controlled portion of real butter, and the natural sweetness of a good apple, make this dessert rich enough to satisfy.

Steps:
- Use 1 teaspoon of the butter to grease a round, 2-quart casserole dish that has a lid.
- Pile in the chopped apples.
- Sprinkle with the cinnamon and cloves.
- Dot surface with the remaining butter.
- Cover and bake at 350°F for 45 to 60 minutes or until apples are tender.
- This is easy to expand to fill as large a covered casserole as your family or group requires.

WW 1 POINT (WW) WARM CHUNKY APPLE "PIE"
I was given a bunch of apples and wondered what to do with them. I searched all of my cookbooks and found a similar recipe. I just changed it to be Weight Watchers "friendly". It tastes just like warm apple pie without all the guilt! I am going to try it over pancakes too!

Steps:
- Peel and cut apples into chunks and place in a crockpot.
- In a small mixing bowl mix splenda, water and cinnamon.
- Pour over apples.
- Cook on Low setting for 4-5 hours stirring occasionally.
- Serve warm with Ice Cream or Cool Whip (I used Fat Free Cool Whip for 0 pts on Weight Watchers).
- 1 Cup= 1pt.
- Delicious and very filling too!

SOOOooo easy...SOOOooo tasty and even more heart healthy than the original version...A reminder: DONT forget to cover TIGHTLY with foil b4 baking or the stuffing could dry out! Meal tip: Add a tossed salad and have dinner!

- Preheat oven to 350°F.
- Combine water and butter in a medium bowl until butter melts; Stir in stuffing mix until JUST moist; set aside.
- Mix the soup, milk, lime juice and garlic in a medium bowl until well incorporated; set aside.
- In the bottom of a non-stick 13 x 9 pan, spread the mixed vegetables evenly; Then spread the cubed cooked chicken over the mixed vegetables evenly.
- Pour the soup mixture evenly over the chicken; sprinkle/spread the stuffing over all.
- Cover tightly with foil and bake in the preheated oven for 45 minutes or until hot and bubbly.

CRUSTLESS APPLE MERINGUE PIE
Tastes just like strudel, but can be made in a jiffy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking pan.
- In a medium bowl, combine apples with lemon juice; use enough juice to cover all apple pieces. In a separate bowl, mix together flour,3/4 cup sugar and cinnamon. Divide flour mixture into four parts.
- Place 1/4 of apples onto the buttered baking pan, sprinkle some raisins and walnuts on top, then add 1/4 of the flour mixture. Repeat this step until all flour mixture is used. In a medium bowl, beat yolks with milk and pour evenly over apples. Bake in preheated oven for 35 minutes or until toothpick comes out clean.
- To Make Meringue: In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 3 tablespoons sugar, continuing to beat until whites form stiff peaks. Spread meringue over pie, covering completely. Put pie back in oven for a 6 or 7 minutes, or until meringue is slightly golden. Can be served warm or cold.

I had to put down an amount of apples but use as many as it takes to fill your pie tin.You could also just use a can of apple pie filling.
