Steps:

  • Mix 3 tablespoons rice wine vinegar, 1 tablespoon sesame oil, 1/2 teaspoon sugar and 1/4 teaspoon kosher salt in a medium bowl. Toss with 1 pound sliced Persian cucumbers, 2 sliced scallions, 1/4 cup cilantro, 2 tablespoons sliced pickled ginger, 1/2 finely chopped red jalapeno and 1 tablespoon sesame seeds.

Pasta Salad with Tomatoes, Cucumbers and Grilled Green Onion-Crushed Olive Vinaigrette image

Steps:

  • Preheat a grill to high.
  • Toss the scallions in 2 tablespoons of the olive oil and season with salt and pepper. Grill the scallions until the bulbs are tender and the greens are well charred, 6 to 8 minutes, turning every couple of minutes. Set aside to cool. When the scallions are cooled, chop them finely.
  • Bring a large pot of salted water to a boil for the pasta. Add the pasta and cook until al dente, about 2 minutes less than the package instructions.
  • In a medium bowl, whisk together the vinegar and mustard. Season with salt and pepper. Whisk in the remaining 1/3 cup olive oil. Add the scallions and toss to coat.
  • When the pasta is finished cooking, drain and add to the vinaigrette. Add the olives, tomatoes, red onion, provolone, dill, parsley and arugula. Toss to combine.

Cucumber Pasta Salad image

Steps:

  • Peel the cucumbers. Quarter, then slice the cucumber (remove seeds first, if you wish -- I always do).
  • Cook pasta according to package directions. Drain and rinse with cold water.
  • Combine the cucumbers, pasta, and slaw dressing. Add the green onion and garlic salt, if desired. Toss to combine.
  • Allow to chill for atleast an hour for flavors to come together.
  • Enjoy!

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and let cool, 10 to 15 minutes.

  • Cook pasta according to directions, about 8 minutes, stirring occasionally.
  • While pasta is cooking, chop tomato, peppers and onion into very small pieces. Add olives and mix.
  • Drain Rotini; rinse with cold water for about 3 minutes.

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. SMASHED CUCUMBER SALAD

By crushing our cucumber before we cut it, we produce flavors that un-smashed cukes can't. When you crush the cells in a vegetable, as opposed to cutting cleanly through them, certain compounds get mixed together, which can result in a significantly different flavor. Smashed Cucumber Salad image

Steps:

  • Wrap each cucumber in plastic wrap to minimize splattering. Place on a work surface and pound with a flat object (like a meat pounder) until cucumbers crack and are slightly flattened. Remove from plastic. Cut cucumbers in half; halve each side lengthwise. Slice into 1- to 1 1/2 -inch wide slices. Transfer to a strainer set over a bowl.
  • Sprinkle cucumber with sugar and salt; mix until well combined. Refrigerate bowl and strainer for 30 to 60 minutes so cucumber pieces can drain into the bowl.

I usually make enough for at least two or three servings so I'll have something for a quick, easy brown-bag lunch or perhaps a light dinner. This recipe is easy on the budget, relatively healthy, and is a great side dish. I'll sometimes have a small bowl of this salad with a toasted slice of baguette bread, lightly brushed with extra virgin olive oil and rubbed with a fresh garlic clove and a sprinkling of oregano, and a glass of my favorite wine. Steps:

  • Cook rotini as directed on package to al dante; Drain and run pasta under cold water.
  • Drizzle italian dressing over pasta, mixing slowly so as not to break apart the pasta pieces. Add in tomatoes, black olives, cucumber, and 5 tablespoons of the feta cheese. Continue mixing ingredients until well-coated.

Penne With Cucumbers, Tomatoes and Feta Cheese Salad image

Steps:

  • Wash, core, and chop the tomatoes into 1/2 inch cubes.
  • Peel the cucumbers, quarter lengthwise and into slivers, I have also cut them into cubes. Put the slivers or cubes in a bowl of cold water.
  • Peel, trim and mince the garlic.
  • Rinse the mint leaves, pat them dry and coarsely chop them.
  • In a small skillet, cook the garlic in the olive oil over low heat, stirring until softened, but do not let it brown. Add the pepper flakes, anc cook for 1-2 minutes. Remove from the heat and let cool to room temperature. Then blend in vinegar.
  • Bring a large pot of salted water to a boil. Add pasta and cook according to directions for an al dente pasta. Drain the pasta. To prevent the pasta from sticking you can spread it out on a large baking sheet and let it cool for about 15 minutes.
  • Drain the cucumbers.
  • In a large ceramic bowl add pasta, the tomatoes, cucumbers, mint, olives and seasoned olive oil. Toss well until past is uniformly shiny. Crumble the feta cheese into the salad and toss to combine. Best served within an hour of finishing.

1/2 cup pitted kalamta olive
1 lb crumbled feta cheese

This is an easy delicious side dish that can be made for a picnic, barbecue, lunch, or supper. My sister brought it to a get together at my house and I've been making it ever since. It is now a favorite throughout our family and I'm sure you will enjoy it too!

Zesty Italian Pasta Salad image

Steps:

  • Boil and prepare pasta nuggets as directions indicate on the side of the box.
  • Drain pasta and set aside in a large bowl.
  • Chop into small chunks cucumbers, tomatoes, onion, and pepperoni.
  • Add these ingredients to pasta.
  • For the finishing touch add dressing and seasoning to the pasta mix and stir.
  • If you prefer more dressing and seasoning use the full amount listed in the ingredients.

1 medium onion
4 ounces pepperoni
1 (12 ounce) box pasta, nuggets
0.5 (16 ounce) bottle of zesty Italian dressing (up to 1 bottle)

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook according to the package directions; drain and rinse under cold water. Transfer to a large bowl.
  • Meanwhile, make the dressing: Combine the garlic, red pepper flakes and olive oil in a small saucepan. Cook over medium heat, stirring, for 3 minutes; let cool. Season with salt and black pepper.
  • Add the chicken, cucumber, cherry tomatoes and feta to the pasta. Pour the dressing over the pasta salad and toss to coat. Season with salt and black pepper. Chill for up to 3 hours.
