- Preheat a grill to high.
- Toss the scallions in 2 tablespoons of the olive oil and season with salt and pepper. Grill the scallions until the bulbs are tender and the greens are well charred, 6 to 8 minutes, turning every couple of minutes. Set aside to cool. When the scallions are cooled, chop them finely.
- Bring a large pot of salted water to a boil for the pasta. Add the pasta and cook until al dente, about 2 minutes less than the package instructions.
- In a medium bowl, whisk together the vinegar and mustard. Season with salt and pepper. Whisk in the remaining 1/3 cup olive oil. Add the scallions and toss to coat.
- When the pasta is finished cooking, drain and add to the vinaigrette. Add the olives, tomatoes, red onion, provolone, dill, parsley and arugula. Toss to combine.

COOL CUCUMBER PASTA SALAD
I got this recipe from a good friend of mine several years ago. I always make it when my cucumbers are ready in the summer. It has a sweet & tangy flavor and the longer you leave the onions and cucumber set in the dressing the more they soak up the great taste! - While pasta is cooking, chop tomato, peppers and onion into very small pieces. Add olives and mix.
- Drain Rotini; rinse with cold water for about 3 minutes.
- Mix pasta with tomato, peppers, onion and olives.
- Refrigerate for about 1/2 an hour.
- Add salad dressing; mix well.
- Add Parmesan cheese; mix well.
- Serve immediately.
- If you have left overs, you will have to "re-wet" salad by adding a little more salad dressing the next day, especially if you substitute the dressing with a fat-free dressing.
CUCUMBER DILL PASTA SALAD
There are lots of pasta salad recipes here but I don't see this particular variation. I love dill in most anything and combined with cucumbers and pasta, it's tart/creamy comfort food to me. For even more color & crunch, radishes could be added for another twist. You may need to adjust the mayo and sour cream amounts - I don't really measure it so I've guessed. SMASHED CUCUMBER SALAD
By crushing our cucumber before we cut it, we produce flavors that un-smashed cukes can't. When you crush the cells in a vegetable, as opposed to cutting cleanly through them, certain compounds get mixed together, which can result in a significantly different flavor. In cucumbers this is a good thing--onions, not so much. But this salad is one of my all-time favorite cold summer side dishes. The only decision you're going to have to make is how long to let the cucumbers marinate--half an hour or so or not at all.

- Wrap each cucumber in plastic wrap to minimize splattering. Place on a work surface and pound with a flat object (like a meat pounder) until cucumbers crack and are slightly flattened. Remove from plastic. Cut cucumbers in half; halve each side lengthwise. Slice into 1- to 1 1/2 -inch wide slices. Transfer to a strainer set over a bowl.

I make this recipe mostly in late Spring and especially during the Summer months using cucumbers and cherry tomatoes, fresh from my own garden. I usually make enough for at least two or three servings so I'll have something for a quick, easy brown-bag lunch or perhaps a light dinner. This recipe is easy on the budget, relatively healthy, and is a great side dish. I'll sometimes have a small bowl of this salad with a toasted slice of baguette bread, lightly brushed with extra virgin olive oil and rubbed with a fresh garlic clove and a sprinkling of oregano, and a glass of my favorite wine. - Wash, core, and chop the tomatoes into 1/2 inch cubes.
- Peel the cucumbers, quarter lengthwise and into slivers, I have also cut them into cubes. Put the slivers or cubes in a bowl of cold water.
- Peel, trim and mince the garlic.
- Rinse the mint leaves, pat them dry and coarsely chop them.
- In a small skillet, cook the garlic in the olive oil over low heat, stirring until softened, but do not let it brown. Add the pepper flakes, anc cook for 1-2 minutes. Remove from the heat and let cool to room temperature. Then blend in vinegar.
- Bring a large pot of salted water to a boil. Add pasta and cook according to directions for an al dente pasta. Drain the pasta. To prevent the pasta from sticking you can spread it out on a large baking sheet and let it cool for about 15 minutes.
- Drain the cucumbers.
- In a large ceramic bowl add pasta, the tomatoes, cucumbers, mint, olives and seasoned olive oil. Toss well until past is uniformly shiny. Crumble the feta cheese into the salad and toss to combine. Best served within an hour of finishing.

- Bring a large pot of water to a boil along with 1 tablespoon kosher salt. Cook the pasta according to the package directions. Drain, but do not rinse the pasta.
- While the pasta is cooking, combine the tomatoes, oil, vinegar, garlic, salt, and pepper in a medium-size bowl. Stir and let sit while assembling the rest of the salad.
- In a large mixing bowl, combine the cucumbers, olives, red onion, and cooked pasta. Add the tomatoes and all of the juices from the bowl. Stir to coat everything in the dressing.
