Steps:

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
  • Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
  • Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.

Steps:

  • Preheat the oven to 350 degrees F.
  • Drizzle the oil over the crusts in a large bowl. Add 1/2 teaspoon salt and a few grinds of pepper and toss gently until the crusts are evenly coated in the oil. Add the Parmesan and thyme and toss gently to combine. Spread the crusts out in an even layer on 2 baking sheets. Sprinkle any unstuck cheese and thyme over the crusts.
  • Bake, tossing about halfway, until the crusts are deep golden and crunchy, about 20 minutes. Let cool on the baking sheets. Store at room temperature in an airtight container for up to 2 days.

Steps:

  • Add the dough ingredients to the bread machine in the order given, and set to first rise.
  • When this has finished, roll the dough out into a rectangle which is 1/2-3/4 inch thick.
  • With a pizza cutter, cut the dough into 1x4 inch strips.
  • Place on greased cookie sheets and allow the bread sticks to rise until doubled.
  • Meanwhile, stir the topping seasonings together with the parmesan cheese.
  • Brush the breadsticks heavily with olive oil.
  • Sprinkle with the topping. I use an empty spice bottle to shake it on evenly.
  • Bake the bread sticks at 350°F for 12 to 15 minutes until golden.

  • Dissolve sugar and yeast in 1 cup plus 1 tablespoon warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Combine flour and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix 2 tablespoons butter into flour mixture until incorporated. Pour yeast mixture into flour mixture and knead dough using the dough hook attachment until smooth and elastic, about 10 minutes.
  • Place dough in a container and cover container with a towel or plastic wrap; let stand until doubled in size, 1 to 1 1/2 hours.

THE ULTIMATE BREADSTICKS

I did it! I finally found the recipe for the absolute best breadsticks. This recipe makes big, beautiful breadsticks and lots of them too. I experimented with the original recipe and made several adjustments and made many variations as well. The recipe can easily be halved, but you might as well make them all and freeze what you don't use (we never have to do this though, they all get gobbled up).

Steps:

  • In a large bowl, dissolve yeast in 1 cup of water with sugar.
  • Let stand 5 minutes.
  • Add the rest of the ingredients except the butter.
  • Stir into dough and knead until smooth and elastic and slightly sticky (I use a heavy- duty mixer).
  • Place in greased bowl, cover and let rise until double, about 1 hour.
  • Punch down. Divide dough in half.
  • Roll one half dough out into a 12 x 18 inch rectangle on a floured surface.
  • Brush with melted butter.
  • Cut dough in half vertically, and then cut horizontally into 8 strips (16 bread sticks from one half of dough).
  • Repeat this same step with other half of dough. You should have 32 bread sticks all together.
  • Now at this point you can do the following variations:.
  • Cheesy Bread Sticks: Press buttered side down of breadstick in freshly grated Parmesan cheese. Twist bread stick multiple times and lay out on parchment lined cookie sheets. (I do about 8 to a pan-parchment necessary so the cheese won't stick to the pan). Cover and let rise 30 minutes or until double in bulk and then bake. After baking, brush with remaining melted garlic butter.
  • Garlic Butter Bread Sticks: Twist bread sticks that have already been spread with garlic butter mixture. Place on greased baking sheet and let rise 30 minutes. After baking, brush again with melted garlic butter.
  • Herb & Cheese Breadsticks: Use plain melted butter to spread on dough, then sprinkle bread sticks with Parmesan cheese and Salad Supreme. Place on sprayed baking sheets and let rise 30 minutes before baking. Brush again with remaining melted butter after baking.
  • Pizza Breadsticks: Let buttered bread sticks rise on parchment lined baking sheets 30 minutes. Spread with pizza sauce and place pepperoni on top. The last 5 minutes of baking add shredded cheese.
  • Cinnamon Sugar Breadsticks: Dip bread sticks in 1 stick melted of butter (skip the brush with melted butter step). Roll in a mixture of 2 cups brown sugar and about 1 Tbsp cinnamon (might need more sugar mixture depending on how much you use). Twist and let rise on parchment lined baking sheets. Bake.
  • *Spray pans or use parchment paper and cover lightly while rising.
  • **Let bread sticks rise 30 minutes before baking.
  • ***Note all bread sticks will be cooked 15 to 18 minutes at 350° or until lightly browned.

Steps:

  • In a small bowl whisk together water and yeast and let stand while combining remaining dough ingredients.
  • Pulse together flour and salt 2 or 3 times to combine. Add oil, butter, or lard and pulse until combined well, 10 to 20 times. Add yeast mixture, scraping all of it from bowl with a rubber spatula, and pulse until dough forms a ball, about 10 times. Let dough rest in processor 5 minutes. Process dough continuously 10 seconds. On a lightly floured surface knead dough just until it forms a smooth ball.
  • In bowl combine flour and salt and mix on low speed until combined. Add oil, butter, or lard and beat until thoroughly combined, about 3 minutes, stopping to scrape bowl and paddle as necessary. Add yeast mixture, scraping all of it from bowl with a rubber spatula, and beat on low speed until dough forms a ball, about 5 minutes. Let dough rest 5 minutes and beat on low speed 1 minute. On a lightly floured surface knead dough just until it forms a smooth ball.
  • In a large bowl stir together flour and salt. Add oil, butter, or lard and blend with fingertips or a pastry blender until mixture resembles coarse meal. Add yeast mixture, scraping all of it from bowl with a rubber spatula, and stir until a rough dough forms. On a lightly floured surface knead dough just until it forms a smooth ball, about 5 minutes.
  • Put dough in a lightly greased bowl, turning to coat, and let rise, covered tightly with plastic wrap, at room temperature until doubled in bulk, about 1 hour.
  • On lightly surface knead dough lightly to deflate and form into a ball. Grease bowl again and return dough to bowl, turning to coat. Chill dough, covered tightly with plastic wrap, at least 2 hours and up to 1 day.
  • Preheat oven to 325°F. and lightly dust 3 jelly-roll pans or large baking sheets with cornmeal.
  • Turn dough out onto lightly floured surface, making sure dough emerges from bowl in one piece and doesn't fold. (Folded dough becomes too elastic and is difficult to form into breadsticks.) Pat dough into a 9-inch square and cut in half to form 2 rectangles. Cut each rectangle crosswise into 4 1/2- by 1/2-inch strips for a total of 36 pieces and cover with plastic wrap or kitchen towel to keep them from forming skin.
  • Roll and stretch each piece of dough with palms of hands to form a narrow stick 12 to 15 inches long. (If dough resists, let pieces rest, covered, 5 minutes, and they will roll and stretch easily.) Arrange breadsticks as formed on pans about 1/2 inch apart and let rest 10 minutes. Bake 2 pans of breadsticks in upper and lower thirds of oven, switching their positions halfway through baking, until breadsticks are firm, crisp, and pale golden, 20 to 30 minutes. (Third pan of breadsticks may be kept at room temperature while first 2 pans bake.) Transfer breadsticks to racks and cool. Bake remaining pan of breadsticks in middle of oven and cool. Breadsticks may be kept, loosely covered with plastic wrap or in a paper bag, at room temperature up to 1 week. If they absorb humidity and soften, recrisp in a preheated 325°F. oven about 5 minutes.

  • Separate breadstick dough into six pieces. For each heart, unroll four pieces and twist if desired; seal perforations and pinch ends together. Shape into hears on an ungreased baking sheet.
  • For arrows, unroll remaining two pieces and separate into four breadsticks. With scissors, cut one end of each breadstick into a point. About 2 in. from the point, cut out a triangle from both sides of breadsticks (discard removed pieces). At the other end of the breadstick, make diagonal cuts on each side, creating feathers. Steps:

  • In a large mixing bowl or the bowl of a stand mixer, mix together warm water, yeast, sugar, and salt until sugar has dissolved.
  • Add in oil and flour and mix until a smooth dough forms and it's no longer sticky.
  • Roll out into a 10x12" rectangle.
  • Cut into strips about 3/4" - 1" wide.
  • Twist each strip once or twice and lay out on a greased baking sheet (I sprayed mine with non-stick cooking spray).
